Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

A Feast in Ishiyama: Seafood Direct from the Port and Fine Wine Pairings

Are you looking for an izakaya in Ishiyama, Shiga, to create a special evening? Whether it's a date with a loved one, a lively celebration with colleagues, or a large banquet, the stars of any occasion are delicious food, great drinks, and the time spent with others. Our restaurant offers more than just delicious meals; we provide a memorable experience where you can feel the story behind our food and our deep commitment to our ingredients. In particular, the combination of fresh seafood sourced directly from fishing ports across Japan and the exquisite wines that accompany them will surely enrich your dining experience.

Enjoying seafood in a place like Ishiyama. Here, adjacent to Lake Biwa, why is it that seafood brought directly from distant fishing ports captivates our hearts so? And how do we create the encounters between this fresh bounty of the sea and the wines that further enhance it? In this article, we will delve deep into the true value of direct from the port that we strive to offer our customers, and the infinite possibilities woven by seafood and wine pairings. We hope you will read to the end and use this as a reference for your next banquet in Ishiyama or when choosing an izakaya for a special day.

The Allure of Direct from the Port: Where Freshness and Excitement Intersect

When you hear the phrase direct from the port, you likely expect incredible freshness. However, its appeal goes far deeper than just being fresh. The port-direct seafood we serve is made possible by a system that shortens the typical distribution channels, allowing us to deliver fish and shellfish to our customers as quickly as possible after they are caught. This process isn't just about reducing physical distance; it embodies our philosophy of respecting time, freshness, and, above all, the season.

  • Overwhelming Freshness from a Shorter Supply Chain
In standard seafood distribution, products go through multiple stages—from the port to the market, through middlemen, and finally to retailers or restaurants. With our port-direct system, we cut out most of these intermediate steps. The catch is delivered almost directly to our restaurant, allowing us to offer a level of freshness and vitality rarely experienced through conventional routes. It is this time-saving that allows you to fully enjoy the inherent umami and texture of the seafood.
  • Encountering the Day's Unique Seasonal Bounty
By sourcing directly from fishing ports, we can acquire rare fish that seldom appear in the general market and unique shellfish that are only landed during specific times of the year. The diverse species caught in set-net fishing, for example, directly reflect the blessings of the sea on that particular day. We take great joy in bringing these once-in-a-lifetime treasures—the very catches that the fishermen proudly send us as the best of the day—to your table.
  • The Peace of Mind of Knowing the Producers
Sourcing directly from the port is about more than just logistical efficiency. We cherish the relationships of trust we have with the fishermen who provide us with their catch. By understanding the environment and methods used in their fishing, we believe our customers can enjoy their meals with greater peace of mind and an enhanced sense of taste. Ingredients infused with the passion of their producers add another layer of depth to our cuisine.

What Our Daily-Changing Today's Specials Tell You

The Today's Specials menu we present to our customers each day is the very symbol of our port-direct sourcing. The best catch of the day arrives in Ishiyama to our customers that very same day. That's why our menu changes daily, offering more than just a list of options to our guests.

  1. An Opportunity to Savor True Seasonality with All Five Senses
Seasonal seafood, which changes throughout the year, is a special treat that can only be enjoyed at its peak. You can savor red sea bream in spring, grunt fish in summer, returning bonito in autumn, and yellowtail in winter—all at the peak of their flavor and fat content. The anticipation of What kind of fish will I get to try today? is part of the dining pleasure.
  2. A Quest for New and Unknown Flavors
Another delight of port-direct sourcing is encountering rare fish you wouldn't typically find at supermarkets or general fishmongers. This includes fish unique to local ports or those with small catches and high scarcity. Tasting these at peak freshness leads to new culinary discoveries. We want to deliver the surprise and excitement of I never knew a fish like this existed! to our customers.
  3. A Masterpiece That Showcases the Chef's Skill
Receiving a different variety of seafood each day is a chance for our chefs to shine. To maximize the unique characteristics of each type of fish, we determine the optimal preparation method—be it sashimi, grilled, simmered, or fried—and serve it in its best possible state. Simple cooking methods allow the true flavor of the ingredients to stand out, letting you experience the freshness and umami of our port-direct catch directly.

Today's Specials is more than just an announcement; it's a promise of a unique dining experience exclusively for you on the day you visit. When you arrive, be sure to ask about our specials. A wonderful encounter surely awaits.

A Guide to Choosing the Right Seafood Izakaya for Any Occasion

To have the best seafood experience in Ishiyama, choosing the right restaurant is key. Here are some tips on how to make the most of our establishment based on your purpose and occasion.

  1. Clearly State Your Needs When Booking
By communicating specific requests when you book—such as I'd like a quiet table for a date in Ishiyama, We need a course with all-you-can-drink for an after-work party, or We'd like a private room for a large banquet—we can propose the best seating and plan for you. Informing us of any allergies or dietary restrictions at this time will also ensure a smoother experience.
  2. Make the Most of Today's Specials
As mentioned earlier, the true pleasure of port-direct sourcing lies in the seasonal catch of the day. When you arrive, start by asking our staff, What is the recommended fish today? We will serve you the freshest, highest-quality seafood of the day, prepared in the most suitable way. In addition to our regular menu, be sure to try these seasonal specialties.
  3. Check the Wine List in Advance
Wine is an essential companion to seafood. Our wine list is carefully curated with seafood pairings in mind. If you have a clear preference for wine, checking the list on our website beforehand to narrow down your choices can be helpful. Of course, you can also consult with our staff on the day, and we will recommend a wine that matches your taste and your meal.
  4. Consider a Set Course Menu
Especially for Ishiyama large banquets or after-work parties, a set course menu allows for a smoother dining experience than ordering à la carte. Our courses, featuring seasonal port-direct seafood, are well-balanced and reduce the burden on the event organizer. We offer several courses to fit different budgets and group sizes, so please consider them.

By keeping these points in mind, your seafood experience in Ishiyama will become even more unforgettable.

The Miracle of Port-Direct Seafood and Wine: Surprising Pairing Techniques

While fresh, port-direct seafood is exquisite on its own, its charm is amplified when joined by its perfect partner: wine. The marriage of the sea's bounty and the grape's gift is nothing short of a miracle. Here, we introduce pairing techniques to help you fully enjoy the harmony of seafood and wine in Ishiyama.

  • Why Wine with Seafood?
Seafood is characterized by its delicate flavors, umami, and unique textures. Wine possesses the ability to enhance these elements rather than overwhelm them. In particular, the acidity and mineral notes in wine can suppress any fishiness and bring out the umami. Furthermore, the rich aroma of wine combines with the flavor of the seafood to create a more complex and profound taste.
  • White Wine Isn't Seafood's Only Friend!
The conventional wisdom that fish goes with white wine is not wrong. However, the diverse seafood dishes we source directly from the port can be paired not only with white wine but also with rosé, light-bodied red wine, and sparkling wine. The optimal wine changes significantly depending on the type of seafood, preparation method, and seasoning. These unexpected combinations can lead to new and exciting flavor discoveries.
  • Our Commitment to Selecting Wines
To provide our customers with the best pairing experience, we select our wines with their compatibility with our dishes as the top priority. Sourced from around the world, each wine has its own unique story and dreams of being paired with our port-direct seafood. We have knowledgeable staff on hand, so please feel free to ask for recommendations. We will propose the perfect bottle to match your preferences and your meal.

Not Just White Wine! New Discoveries in Seafood and Wine Pairings

Pairing seafood and wine is a deep and fascinating art, and there's no need to be bound by rigid rules. The key is to understand the individual characteristics of each ingredient and wine and find combinations that complement each other.

  • The Classic and Versatile Nature of White Wine
It's true that a fresh, mineral-driven dry white wine (like Sauvignon Blanc or Chablis) is an outstanding match for white fish sashimi or carpaccio. Its crisp citrus notes beautifully accentuate the fish's umami. However, for fish dishes prepared with butter or cream sauces, a full-bodied, barrel-aged Chardonnay is a great fit. Even within white wine, the variations are plentiful.
  • The Versatility of Rosé Wine
Rosé wine, which combines the crispness of white wine with the fruitiness of red, is incredibly versatile. It pairs comfortably with slightly more robust seafood dishes like seared bonito (katsuo no tataki) or shrimp in chili sauce, where its soft fruitiness provides a pleasant complement. Rosé also harmonizes well when a variety of seafood, such as sushi and sashimi, is served, as it doesn't overpower the individual flavors.
  • Enjoying Seafood with Red Wine
The idea that red wine doesn't go with fish is an outdated notion. Light-bodied red wines (like Pinot Noir) are surprisingly well-suited for red-fleshed fish like tuna and bonito, as well as rich, flavorful fish like monkfish and splendid alfonsino. The tannins in red wine also create a superb balance with the sweet and savory soy-based seasonings of simmered or teriyaki-style fish dishes, enhancing the overall flavor.
  • A Toast with Sparkling Wine
A classic choice for a toast, sparkling wine is also an excellent partner for seafood. Its fine bubbles and clean acidity stimulate the appetite and refresh the palate. It pairs especially well with shellfish like oysters and scallops, as well as fried items like fritto misto or tempura. Its lightness cuts through the oiliness of the food, making the next bite even more delicious.

A Practical Guide to Wine Pairings by Seafood Type

Here are a few specific pairing examples to help you get the most out of our fresh, port-direct seafood.

  • White Fish (e.g., Red Sea Bream, Flounder, Sea Bass)
Recommended Wine: Fresh, mineral-driven dry white wine (e.g., Sauvignon Blanc, Chablis, Koshu, Sancerre)
Reason: Without overwhelming the delicate umami and mild flavor of white fish, the wine's acidity enhances the fish's taste and adds a refreshing quality. It's ideal for dishes that highlight the ingredient's natural flavor, such as carpaccio, sashimi, and steamed preparations.
  • Red-Fleshed Fish (e.g., Bonito, Tuna, Yellowtail)
Recommended Wine: Light-bodied red wine (e.g., Pinot Noir, Gamay) or rosé wine
Reason: The fruity notes and moderate tannins of the red wine harmonize with the powerful umami and iron-rich character of red-fleshed fish. Recommended for robustly flavored dishes like straw-seared bonito, marinated tuna, and teriyaki yellowtail.
  • Shellfish (e.g., Oysters, Scallops, Clams)
Recommended Wine: Mineral-rich dry white wine (e.g., Chablis, Muscadet) or sparkling wine
Reason: The wine's minerality enhances the briny aroma and concentrated umami of shellfish. Try Chablis with raw oysters instead of lemon, or pair steamed clams with the same wine used in the cooking process.
  • Crustaceans (e.g., Shrimp, Crab, Squid)
Recommended Wine: Full-bodied white wine (e.g., oaked Chardonnay), dry rosé, or Champagne
Reason: A wine with a bit more body is a good match for the unique sweetness and firm texture of crustaceans. The complex flavors of the wine will complement flavorful dishes like shrimp in chili sauce or crab cream croquettes.

For instance, even for the same fish, we devise different ways—sashimi, grilled, or simmered—to bring out its unique deliciousness. If you have any questions about the dishes or want recommendations on how to eat them, please don't hesitate to ask our staff. Knowing the passion behind the food will surely make it taste even better.
  • Actively Enjoy Wine Pairings
Don't be tied to the stereotype that fish must be paired with white wine. Be open to trying various pairings. Our staff also takes great pleasure in recommending the perfect wine to match your preferences and your meal. Discovering new flavors will enrich your dining experience manifold. And for those who are not fond of wine, rest assured that we also have a wide selection of sake and shochu that pair beautifully with our port-direct seafood.
