Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Ishiyama. Sake-friendly bites such as seared Hakata mentaiko are ready to pair.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy seafood in landlocked Shiga in seasonal plates such as our five-kind sashimi platter.

04

05

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

For those looking for an izakaya in Ishiyama for casual gatherings with friends, special dates with loved ones, or corporate farewell/welcome parties. While the deliciousness of the food is paramount, have you ever wondered, What's the perfect drink for today's meal? While classic beer and sake are always good, sometimes pairing with wine can transform your dining experience into something much deeper and more memorable.

The charm of an Ishiyama Izakaya for banquets lies in its wide range of menus, from authentic Japanese dishes made with Shiga's rich ingredients to creative a la carte dishes unique to izakayas. Wine pairing, which combines such diverse cuisine with wine, is sure to provide an exhilarating experience, like opening a new door. Japanese food and wine, surprisingly, pair very well, enhancing each other's flavors. In this article, we'll share tips for making the most of your wine experience at an Ishiyama izakaya.

Is Wine at an Izakaya Intimidating? We'll Ease Your Worries

Some might wonder, Wine at an izakaya? We often hear concerns like, What kind of wine goes with Japanese food? I don't know how to choose from the wine list, or I'm worried if I can choose a wine that everyone will enjoy at a large banquet. Indeed, wine offers a vast variety, and it can feel daunting to choose without prior knowledge.

Especially at an Ishiyama Izakaya for banquets, there's an abundance of dishes utilizing fresh seafood and mountain blessings. From delicate sashimi to rich-sauce yakitori and fragrant fried foods, Japanese cuisine encompasses a myriad of flavors. While finding the optimal wine for each is like a treasure hunt, it's understandable to feel lost. But rest assured, with a few simple tips, anyone can easily enjoy wine pairing. Our restaurant is fully committed to supporting you in your wine selection.

Discovering New Horizons of Japanese Food and Wine at Ishiyama Izakaya for Banquets

Pairing Japanese food with wine might seem challenging at first, but it's actually incredibly profound, with many delightful combinations. Here, we'll introduce some ideas for wines that pair well with specific izakaya dishes.

For Sashimi that Highlights Natural Flavors, Choose White Wine

  • Lean White Fish: Sashimi of white fish like sea bream, flounder, or sea bass pairs exquisitely with crisp, dry white wine. For example, Sauvignon Blanc with its citrus aroma or mineral-rich Chablis are highly recommended. The wine enhances the delicate umami of the fish and leaves a refreshing aftertaste.
  • Flavorful Red Fish: For red fish like tuna or bonito, a slightly richer Chardonnay or a rosé wine, which pairs well with Japanese cuisine, would be a good choice. The key is a firm acidity and fruitiness that can stand up to the flavors of soy sauce and wasabi.
  • Seared Dishes: For lightly seared fish dishes, a barrel-aged Chardonnay or a white wine with a subtle smoky aroma is recommended to complement the savory char.

For Rich Grilled and Fried Dishes, Choose Red Wine or Sparkling Wine

  • Grilled Chicken or Pork: For dishes like yakitori with sauce or grilled pork belly skewers, a light red wine pairs well. A fruity, low-tannin red wine like Pinot Noir enhances the richness of the meat and the sweet-savory notes of the sauce.
  • Fragrant Fried Dishes: For oily dishes like tempura or karaage, sparkling wine with its pleasant effervescence is highly recommended. The bubbles refresh the palate, preventing any greasy sensation and inviting the next bite. A crisp, dry sparkling wine also preserves the natural flavors of the ingredients.
  • Rich Stewed Dishes: For deeply flavored dishes like beef tendon stew, a medium to full-bodied red wine is ideal. For example, wines like Merlot or Syrah, with their robust fruit and tannins, further enhance the richness and depth of the dish.

At Ishiyama Izakaya for banquets, we offer a wide selection of wines tailored to these dish characteristics. Please feel free to consult our staff when choosing your menu.

By Scene! Special Moments in Ishiyama Enhanced by Wine

The choice of wine also changes depending on the purpose and number of people at the banquet. Here, we introduce how to choose wine for various scenes at an Ishiyama Izakaya for banquets.

Ishiyama Date Izakaya: Wine Selection to Enrich Your Time Together

  • Share Preferences: Start by asking your companion's wine preferences. Knowing basic information like white or red, sweet or dry, can make choosing easier. If your preferences differ, enjoying different wines by the glass is also a good option.
  • Prioritize Food Pairing: For a date, enjoying the food pairing is essential. It's smart to ask the restaurant staff for wine recommendations based on the dishes you're ordering. For instance, starting with a light white wine and then moving to a red wine with the main course is a delightful progression.
  • A Memorable Bottle: Splurging a little on a special bottle of wine you wouldn't normally drink is also a highlight of a date. It can be fun to search the wine list for a region or vintage that holds significance for both of you.
  • Presentation Matters: The color of the wine and how its aroma unfolds in the glass also enhance the atmosphere of a date. Beautiful rosé wines or deep red wines add visual splendor.

Ishiyama Large Group Banquet: How to Choose Wine Everyone Can Enjoy

  1. Cater to Diverse Tastes: At a large banquet, it's difficult to know everyone's wine preferences. Therefore, it's wise to choose well-balanced wines that can cater to various tastes. For example, opting for an easy-drinking, medium-bodied red wine and a dry, fresh white wine is a good strategy.
  2. Cost Performance: For larger groups, the cost performance of bottles becomes important. It's recommended to order multiple bottles of good quality house wine or recommended wines that are reasonably priced.
  3. Toast with Sparkling Wine: For the beginning of a banquet, sparkling wine is perfect. Its festive bubbles liven up the atmosphere and enhance the celebratory mood of a toast. It's also an excellent aperitif, stimulating the appetite.
  4. Rosé Wine as an Option: Rosé wine, neither red nor white, is versatile, pairing well with both Japanese and Western cuisine, making it suitable for a wide range of dishes. It's particularly popular with women and adds a touch of color to the banquet table.

For an Ishiyama large group banquet, our staff will propose the optimal wine combinations tailored to your needs. Please feel free to consult us.

Enhance Ishiyama Seafood! The Harmony of Seasonal Seafood and Wine

As an Ishiyama Izakaya, fresh seafood delivered directly from nearby Shiga fishing ports and across the country is one of our proud specialties. Pairing seasonal seafood with wine can amplify its deliciousness many times over.

How to Find Wines That Pair Well with Seasonal Seafood

  • Shellfish and Crustaceans: For shellfish and crustaceans like oysters, clams, shrimp, and crab, a mineral-rich white wine that complements the aroma of the sea is ideal. For example, Muscadet or Chablis highlight the umami of shellfish and prevent any fishiness. Try choosing a wine as you would squeeze lemon.
  • Fatty Fish: For fatty fish like yellowtail or mackerel, a white wine with slightly firm acidity or a light red wine is also a good choice. In particular, white wines with fruity aromas, similar to ginjo sake, refresh the fish's oiliness while bringing out its umami. Also, for fragrant dishes like straw-grilled bonito, a white wine with a slightly smoky aroma or a rosé wine might lead to surprising discoveries.
  • Stewed or Hotpot Seafood: For soy sauce-based stews or dashi-infused hotpot dishes, we recommend domestic Japanese wines crafted to complement Japanese cuisine, or red wines with moderate fruitiness like Pinot Noir. They enhance the warmth of the pairing without overpowering the dish's flavors.

If you want to fully savor Ishiyama seafood, please try pairing it with wine. We will suggest the best wines to match the seasonal seafood as it changes.

Resolve Wine Selection Worries! Smart Ways to Ask Restaurant Staff

Wine is fascinating the more you know about it, but you don't have to choose everything yourself. In fact, relying on the restaurant staff is the smartest and most reliable method. Our staff are knowledgeable about food and wine, so please feel free to ask for assistance.

Tips for Asking: Communicate Your Preferences and Mood Today

  1. When asked, What dishes have you ordered?: Clearly state the dishes you've ordered or plan to order. For example, explaining in detail, We're planning to order the sashimi platter, fried chicken, and a seasonal stew, allows for more precise recommendations.
  2. When asked, What kind of wine do you prefer?: General preferences are fine, such as I usually drink white wine, I like crisp dry wines, or If it's red, I prefer something not too heavy. If there's a type you dislike, mention it, like I'm not a big fan of sweet wines...
  3. When asked, What's your budget?: Stating a specific budget, such as I'd like to try a few by the glass or I'm looking for a bottle up to around XX yen, helps narrow down the options. Don't hesitate to be clear about your budget.
  4. Your Mood Today Also Matters: Communicating your mood today, such as I'm feeling a bit luxurious today, so any recommendations? or I'd like to discover something new that I wouldn't usually drink, makes it easier for the staff to offer suggestions.

By communicating this information, you're sure to find your perfect glass and perfect pairing. At our restaurant, we may even have special bottles not listed on the wine list, so please actively consult our staff.

Non-alcoholic Pairings for Those Who Don't Drink Wine

Besides wine, there may be guests who don't drink alcohol or wish to refrain today. Rest assured, we offer a wide selection of non-alcoholic beverages designed to enhance the flavor of our dishes.

  • Homemade Fresh Juices: Homemade juices made with seasonal fruits refresh the palate between dishes.
  • Carefully Selected Japanese Teas & Hojicha: Aromatic Japanese teas and Hojicha complement Japanese cuisine without overpowering its delicate flavors, offering a gentle pairing experience.
