Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Ishiyama. Sake-friendly bites such as seared Hakata mentaiko are ready to pair.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy seafood in landlocked Shiga in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Ishiyama.

05

Banquets & Private Hire

Relaxed table and open-terrace seating, banquet courses with free-flow drinks, and full-venue bookings (50+) on request. Steps from Ishiyama Station — ideal for company parties and gatherings. Plenty of shareable plates, such as our fried chicken, round out the table.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Among our special courses, the one centered around our signature dish, the Bonito Straw-Grilled, has left a lasting impression on many of our customers. The straw-grilling process itself offers a special experience that stimulates all five senses.

The Appeal of Bonito Straw-Grilled: A Feast for the Five Senses

  1. Sight: The brilliant red flames leaping up before your eyes and the smoke from the burning straw. The sight of the bonito being seared in an instant is like a live performance. The contrast between the aromatic surface and the vibrant red interior whets the appetite.
  2. Smell: The unique, fragrant smoke produced by the burning straw thoroughly infuses the bonito. This aroma is the key to a flavor that sets it apart from ordinary grilled fish.
  3. Sound: The roar of the flames and the sizzling sound of the bonito cooking heighten anticipation for the culinary delight to come.
  4. Touch (Texture): The contrast between the crispy texture of the skin and the moist tenderness of the flesh, unique to straw-grilling, is exquisite. You can enjoy a melt-in-your-mouth feel along with a distinctive bite.
  5. Taste: The combined flavor of the straw's fragrance and the concentrated umami of the bonito is exceptional. Serving it with condiments and ponzu sauce further enhances its taste.

By incorporating this Bonito Straw-Grilled into the course, our culinary philosophy of serving seasonal ingredients in their best condition is more strongly conveyed to our customers. Of course, the bonito, sourced direct from the fishing port, is exceptionally fresh. The straw-grilling process maximizes its umami, creating an unforgettable dish. For customers looking for an Ishiyama banquet izakaya for large gatherings or special occasions, a course meal is a very practical and appealing option. Here are some tips to help organizers resolve common concerns like choosing a venue, selecting dishes, and budgeting, to create a banquet that all participants can thoroughly enjoy.

Tips for a Smooth Banquet Using a Course Menu

  1. Clarify the purpose and number of guests: The suitable course will differ depending on the event's purpose, whether it's a social gathering, farewell party, welcome party, year-end party, New Year's party, or an Ishiyama celebration. Providing an accurate guest count in advance ensures smooth seating and food preparation.
  2. Confirm the budget and course content: Be sure to check your budget ceiling and the details of the course, such as the number of dishes, the main dish, and whether an all-you-can-drink option is included. We offer courses at various price points and can make suggestions based on your needs.
  3. Notify us of allergies and dietary restrictions in advance: If any participants have allergies or food restrictions, please be sure to inform us when making a reservation. We will accommodate with alternative dishes or individual arrangements whenever possible.
  4. Utilize the all-you-can-drink option: An essential part of any banquet, an all-you-can-drink plan can be added to your course. This allows both the organizer and guests to relax and enjoy the party without worrying about the time or drink orders.
  5. Use a private room: We recommend using a private room for important banquets or celebrations where you want to enjoy yourselves without disturbances. You can have a more enjoyable time in a private space. Please mention your preference for a private room when booking.

By keeping these points in mind, we promise that your gathering at our Ishiyama banquet izakaya will become a wonderful and unforgettable time for all attendees. Our staff is happy to personally assist organizers with their plans, so please feel free to contact us.

Passion for Cooking and a Message for Our Customers

Customers visit a restaurant seeking delicious food and a wonderful time. That's why I want to provide a dish that not only meets but exceeds their expectations. This is the belief our chef always holds dear.

  • Respect for Ingredients: Each ingredient, from the fresh seafood delivered direct from the fishing port to the vegetables sourced from local partner farms, carries the passion of its producers. I always strive to bring out the inherent flavor and vitality of these ingredients. I value simple cooking methods that highlight the natural goodness of the materials without over-processing.
  • Pursuit of Technique: While respecting traditional Japanese cooking techniques, I am constantly exploring new methods and combinations with seasonal ingredients. For example, even with a single dish like the Bonito Straw-Grilled, years of experience and refinement are applied to how the straw is burned, the grilling time, and even the way it is sliced.
  • Dialogue with Customers: Although I don't often get to hear from customers directly, hearing the word delicious or seeing their smiles in response to the course meal is my greatest motivation. I prepare for each day imagining our customers smiling as they gather around our food.
  • The Spirit of Hospitality: I believe in providing a complete delicious experience that includes not only the food but also the space and service. Having our guests enjoy heartfelt cuisine in a comfortable atmosphere—that is what we consider the ultimate hospitality.
