Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Celebrate in Ishiyama: A Special Banquet with Seasonal Ingredients

Making Your Ishiyama Party Unforgettable: The Allure of a Feast Crafted from Seasonal Ingredients

Conversations with close friends, celebrating professional success, or marking a new beginning—wrap-up parties are special moments deeply etched in everyone's memory. For those planning a party in Ishiyama, the quality of the food and the restaurant's atmosphere are crucial elements that determine the night's success.

At our restaurant, we prioritize a deep commitment to our ingredients to provide an experience that exceeds your expectations. We don't just serve delicious food; we carefully select high-quality ingredients that allow you to taste the changing seasons and dine with peace of mind. In this article, we'll detail our passion for ingredients and the value it brings to your celebration, providing useful information for everyone planning a party in Ishiyama.

Why are we so dedicated to our ingredients here in Ishiyama? It stems from a sincere desire for you to thoroughly enjoy this once-in-a-lifetime gathering. This commitment is what will elevate your Ishiyama party from a simple meal to an unforgettable day.

Solving the Organizer's Dilemma: The Secret to a Party That Makes Everyone Smile

When tasked with organizing a party in Ishiyama, many people worry, Will everyone be satisfied? Will they like the food? Can I provide the best experience within the budget? These are common concerns.

  • Concerns about food quality: For a special occasion, some may feel that standard fare just isn't enough.
  • Diverse needs of attendees: When age groups and food preferences vary, choosing a menu that everyone genuinely finds delicious is a difficult task.
  • The challenge of choosing a venue: While Ishiyama has many izakayas, it takes time to research which ones truly offer reliable ingredients and can accommodate large parties.
  • Consideration for allergies and dietary restrictions: Careful attention is required to ensure that all your valued companions can enjoy their meal safely.

These worries are critical points that can make or break a party's success, especially when planning a large-scale banquet in Ishiyama, where every preparation step is time-consuming. We believe our commitment to ingredients is the key to solving these problems and creating a banquet where every guest can truly smile. After all, dishes born from the finest ingredients have the power to connect people's hearts more than words and create unforgettable memories.

Seasonal Seafood to Elevate Your Ishiyama Party: The Impressive Freshness of Port-Direct Fish

What makes our Ishiyama parties truly special is our primary focus on seafood. Despite being located in Ishiyama, close to Lake Biwa, we source the finest seasonal fish and shellfish directly from fishing ports across Japan. The exceptional vitality and rich flavor, which cannot be described by the word fresh alone, will transform your banquet into an extraordinary event.

Our Sourcing Philosophy: A Quest for the Peak Season

Every morning, we meticulously check the catch information from major fishing ports across the country. Our discerning eye selects only the best fish of the day, which we source directly to maintain peak freshness and quality. By not limiting ourselves to specific ports, we can offer a wide variety of seasonal seafood throughout the year, which is one of our greatest strengths.

For example, in winter, we receive fatty yellowtail and crab; in spring, cherry sea bream and firefly squid; in summer, rock oysters and abalone; and in autumn, returning bonito and saury. These seasonal stars arrive in our kitchen ready to be served. This seasonal seafood offers a special deliciousness that can only be enjoyed at that time of year, adding a sense of the season to your large-scale Ishiyama banquet.

How Exceptional Freshness Transforms a Banquet

Fish and shellfish that have just arrived from the port are exceptional in their firmness, transparency, and the way their umami flavor spreads in your mouth. Fish served as sashimi has a power as if it just leaped from the sea, while grilled or simmered dishes fully draw out the ingredients' rich, natural flavors. This vitality sets our seafood apart from items that have spent time frozen or in transit.

Customers who visit us for our Ishiyama seafood often tell us, This is the most delicious fish I've ever had, and Every bite is a new delight. Fresh seafood dishes don't just fill you up; they stimulate the senses and spark conversation. We promise that your Ishiyama party will be a memorable feast, colored by the seasonal bounty of the sea.

Savoring Shiga's Bounty: The Taste of Local, Seasonal Vegetables

Just as important as our commitment to seafood is our dedication to seasonal vegetables grown locally in Shiga Prefecture and the surrounding areas. Fresh local vegetables have a deep, rich flavor nurtured by the local climate and pair exceptionally well with seafood. These seasonal vegetables bring color and nutrition to your Ishiyama party.

Sourced Directly from Partner Farmers

We partner directly with trusted local farmers to source fresh vegetables harvested that very day. This allows us to offer rare varieties not often found in the market and special vegetables cultivated with great care, all in their best possible condition.

For instance, our dishes are enlivened by the abundant blessings of each season: juicy Omi tomatoes and cucumbers in summer, sweet daikon radish and turnips in autumn, leafy greens and root vegetables in winter, and fragrant wild plants and new onions in spring. We devise cooking methods that maximize the unique characteristics of each of these vegetables.

Dishes Where Vegetables Take Center Stage

In our cuisine, vegetables are not mere accompaniments. We cherish the natural sweetness, bitterness, and texture of seasonal vegetables, sometimes making them the star of a dish. For example, our salads, featuring plenty of fresh Shiga vegetables, are served with a carefully crafted dressing that enhances the vegetables' inherent deliciousness. We also bring out the full appeal of each vegetable through optimal cooking methods, such as grilling, tempura, or simmering.

As an Ishiyama izakaya, we believe that respecting local ingredients and elevating them into cuisine helps promote the charm of our region through food. The harmony created by the umami of our seafood and the rich flavors of vegetables from the earth will keep your palate entertained and make the table at your large-scale Ishiyama banquet even more vibrant.

The Art of the Chef: Techniques to Maximize Ingredient Flavor

Even the most wonderful ingredients cannot reach their full potential without expert cooking to draw out their charm. At our restaurant, our experienced chefs constantly pursue cooking methods that maximize the unique character of each ingredient. Our commitment to ingredients is delivered to you in its finest form, thanks to the skill of our artisans. With pride as an Otsu izakaya, we prepare every single dish with heartfelt care.

Perfect Seasoning to Enhance Seafood's Umami

In seafood cuisine, a chef's skill is most tested by their ability to season dishes just right to bring out the ingredients' natural flavor. For sashimi, we calculate the perfect thickness for each type and cut of fish to optimize the texture and flavor explosion upon the first bite. For grilled fish, we use the far-infrared effect of charcoal grilling to achieve a fragrant exterior and a plump, juicy interior. For simmered fish, we apply a delicate seasoning that allows the fish's own umami to deeply permeate without being overpowered by the broth.

For example, when salt-grilling a fresh sea bream, we don't just sprinkle salt. We carefully assess the thickness of the flesh and the fat content, finely adjusting the heat and the amount of salt. We believe this meticulous attention is what accentuates the fish's natural sweetness and umami, conveying a sense of delight to our customers. We would be honored if you feel our Ishiyama seafood is not just a dish, but a work of art.

Precise Cooking to Preserve the Texture of Seasonal Vegetables

The chef's skill also shines in the preparation of vegetables. The texture and flavor of a vegetable can change dramatically with just a slight difference in cooking, depending on its type and freshness. We identify the optimal cooking point for each vegetable, such as quickly cooking those we want to remain crisp or slowly heating those from which we want to draw out sweetness.

For instance, when simmering spring bamboo shoots, we are careful not to overcook them to preserve their unique flavor and texture. For summer Kamo eggplant, we consider its affinity for oil, deep-frying it to create a melt-in-your-mouth texture and a rich, deep flavor. These techniques are born from the chef's experience and intuition, something that cannot be replicated by simply following a recipe. We strive daily to ensure that the bounty of the season is served at your Ishiyama party in its most perfect state.

Choosing the Right Course for a Successful Ishiyama Party: Balancing Budget and Content

To ensure your Ishiyama party exceeds all expectations, we offer a variety of courses that allow you to fully enjoy our carefully selected seasonal ingredients. You can choose the optimal course to match your budget, your guests, and the purpose of your banquet. We also provide detailed support to address any concerns an organizer might have, such as Which course is best? or Can the number of people be changed?

The Appeal of Our Seasonal Limited Courses

A major draw of our course meals is their generous use of seasonal ingredients that can only be enjoyed at that specific time of year. Our Seasonal Limited Courses, which change with the seasons, are thoughtfully composed by our chefs to showcase the best seafood and local vegetables in their most delicious forms. You are sure to find new discoveries and delights each time you visit.

For example, popular seasonal offerings include the Monkfish Hot Pot Course or All-Crab Course in winter, and the Pike Conger and Seasonal Vegetable Course in summer. These courses are not just a collection of dishes; they are designed as a complete experience with a narrative, leaving a special memory for all participants. Especially for a large-scale Ishiyama banquet, having a set course allows the organizer to relax and enjoy the party as well.

Flexible Accommodations for Large Parties

For a successful Ishiyama party or large-scale banquet, flexible service is just as essential as the food. To meet the diverse needs of our customers, we are happy to customize course content and accommodate allergies or dietary restrictions.

  • Changes in Guest Count: We will accommodate last-minute changes in the number of guests as flexibly as possible. Please feel free to consult us when making your reservation or even right before the event.

A Practical Guide: How to Plan the Perfect Party in Ishiyama

To help organizers plan an Ishiyama party without any confusion, we've created a practical step-by-step guide. By using this guide, you can smoothly and reliably organize a memorable banquet.

Your Checklist for a Successful Party

  1. Decide on the Date, Time, and Number of Guests: First, determine the specific date and time for the party, as well as the expected number of attendees. This will give you a baseline for choosing a venue and a course.
  2. Clarify Your Budget and Purpose: Clarifying the per-person budget and the desired atmosphere (e.g., formal, casual) will make it easier to narrow down your options for venues and courses.
  3. Contact and Reserve a Venue: Please contact an Ishiyama izakaya like ours by phone or through our website. Providing the following points will make the process smoother:
    • Number of guests and desired date/time
    • Your budget (if you have one)
    • The purpose of the banquet (e.g., welcome/farewell party, year-end party)
    • Key priorities (e.g., desire for a private room, focus on seafood dishes)
  4. Discuss and Finalize the Course Content: When you make your reservation, consult with our staff about the details of the course menu. It's important to clearly communicate any allergies, disliked foods, and drink preferences (e.g., all-you-can-drink option) at this stage.
  5. Final Confirmation and Communication with Guests: Once the reservation is confirmed, send a final notice to all attendees with the date, time, location, and course details. Informing them about any allergy accommodations will help them feel at ease.
  6. Enjoy the Party!: Once preparations are complete, all that's left is to enjoy the day to the fullest. Our staff will provide heartfelt hospitality to ensure your Ishiyama party becomes a wonderful memory.

  • Book Early: We tend to be busy, especially on weekends and during the year-end and welcome/farewell party seasons. We recommend booking early to secure a good table or a private room.
  • Special Requests: Please feel free to ask about any special requests, such as organizing a surprise or arranging a special cake. We will do our best to assist you.
  • Check Transportation: While we are conveniently located as an Awazu drinking establishment, it's a good idea to confirm your transportation options for the return journey (e.g., taxi, public transport) in advance.

By following these steps, organizers can confidently prepare for a large-scale Ishiyama banquet and enjoy the party as one of the attendees. We welcome you with our commitment to ingredients, our chefs' skills, and our sincere hospitality to ensure your Ishiyama party becomes your best memory.
