Our story
Located by Ishiyama Station in Otsu, Shiga, Uomaru is a seafood izakaya where fresh fish and carefully selected sake meet the craft of robatayaki grilling.
Sashimi finished by skilled hands from fish delivered straight from the port, bonito from Kochi, and Omi beef from Shiga — grilled dynamically right before you over straw and charcoal.
A calm Japanese space with lively counter seats and relaxing table and sofa seating — for dates, family dinners, and company banquets alike.
Commitment
In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.
Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.
We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.
Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.
Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.
A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata
How to enjoy straw-grilling and robata
About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.
The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.
Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.
Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Column
Life is full of special moments we wish to etch deep into our memories. Important business dinners, anniversaries with family or partners, or milestone gatherings with close friends. Where you spend this important day, and with what kind of cuisine and hospitality, are crucial factors that determine its success.
Our yakitori restaurant, located in Awazu-cho right by Ishiyama Station and Keihan Ishiyama Station in Otsu, Shiga, is dedicated to making these special occasions perfect. We offer carefully selected Omi chicken grilled over Binchotan charcoal and our Hakata Mizutaki hot pot, popular not just in winter but all year round. In this column, we will share the full charm of our restaurant and how to make the most of it, so that everyone planning a special day in Ishiyama can truly feel, I'm glad I chose this place.
For those searching for a venue with keywords like Ishiyama Yakitori, Ishiyama Station Yakitori, Otsu Yakitori, Keihan Ishiyama Izakaya, or Awazu-cho Yakitori, this article is packed with useful information. We invite you to read on and envision spending your next special day with us.
This is a place to host someone important, so I absolutely cannot afford to fail.
This is a sentiment shared by everyone planning a business dinner or anniversary. You know that the choice of a restaurant can drastically change the impression of the entire day, which is why everyone is so cautious. However, when you actually start looking for a place, you often face the following dilemmas:
It's especially difficult to judge a restaurant you've never been to based solely on online information. Everyone wants to avoid a situation where the reality doesn't meet expectations. Our restaurant has gone to great lengths to address these concerns and provide a time of genuine satisfaction. From here, we will introduce our specific solutions one by one.
For business entertainment, making your clients feel comfortable is of the utmost importance. This requires not only high-quality food but also a calm space that encourages conversation and attentive, considerate service. For anniversaries, you want to create a special sense of excitement or a surprise that goes beyond the everyday.
Our restaurant meets these expectations. While conveniently located just a 3-minute walk from Ishiyama Station, we feature a calm and elegant atmosphere that lets you forget the hustle and bustle of the city. In the following chapters, we will introduce the specific solutions we offer to help you achieve the success you desire.
What we offer with the most confidence is our Binchotan charcoal yakitori made with Omi chicken, the pride of Shiga Prefecture. This special dish will elevate your important occasion.
Omi chicken is a true blessing of Shiga, raised stress-free in a rich natural environment. While typical chickens are shipped in about 50 days, our Omi chicken is slowly and carefully raised for approximately 100 days, about twice the time. This results in a fine-textured meat with just the right amount of firmness and a uniquely deep, concentrated umami flavor. The difference is clear from the first bite. The plump texture, combined with the juicy, rich flavors that spread through your mouth, will satisfy all five senses.
We serve not only classic cuts like thigh and breast but also offal skewers like heart, liver, and gizzard, all at peak freshness. Depending on the day's stock, you might even encounter rare cuts like tsunagi (heart-liver aorta) or furisodo (shoulder meat). Our skilled chefs meticulously prepare each skewer to bring out the maximum potential of the chicken's character.
A commitment to the grilling method is essential when discussing the deliciousness of yakitori. We use the highest quality Binchotan charcoal. Binchotan has a powerful far-infrared effect, which quickly sears the surface of the ingredients while cooking the inside slowly and thoroughly. This achieves the ideal result: crispy and aromatic on the outside, yet plump and juicy on the inside.
Furthermore, the unique, rich aroma of Binchotan charcoal infuses the chicken, adding a fragrant flavor that stimulates the appetite. The flames lock in the umami, while excess fat drips away, maximizing the chicken's natural taste. This Binchotan magic is what makes our skewers so special. We invite you to enjoy the craftsmanship of our chefs at the counter seats, where they masterfully adjust the heat and grilling time for each skewer.
A sense of the season is also a key element when it comes to Ishiyama Yakitori. In addition to our Omi chicken skewers, we select the best seasonal vegetables and offer them as skewers. Vegetable skewers featuring fresh asparagus, shiitake mushrooms, or eggplant, grilled to bring out their natural sweetness and aroma, are perfect for a change of pace.
We also offer a rich variety of a la carte dishes crafted to pair perfectly with our drinks. From masterpieces that fully capture the umami of chicken to mixed dishes incorporating seasonal ingredients, our menu complements the yakitori and enriches your dining table.
Just as important as the delicious food are the space where you spend your time and the attentive service you receive. These are indispensable for a successful business dinner or anniversary. We offer a high-quality, relaxing space and warm hospitality to suit our customers' various needs.
For business dinners, there are many situations where you want to focus on conversation without worrying about your surroundings. For anniversaries, you may desire a special, private time for just the two of you. At our restaurant, we have three completely private rooms available, accommodating groups of 2 to 10 guests. These quiet, serene Japanese-style spaces are ideal for important business discussions or private conversations.
Each private room is spaciously designed for your comfort, and some feature horigotatsu-style seating (sunken floor) so you can relax your legs. Please mention your preference for a private room when making a reservation. We will propose the best room for your group size and purpose.
Another attraction of our restaurant is the lively counter seating. Watching our skilled chefs prepare Binchotan charcoal yakitori right before your eyes is an entertainment experience that stimulates the senses of sight and smell. The flickering flames, the sizzling sound of meat grilling, and the chef's deft movements—savoring our skewers while experiencing all this with your five senses is truly exceptional.
The counter seats are especially recommended for dates or for those who wish to enjoy a meal leisurely on their own. Engaging in conversation with the chefs can deepen your understanding of the cuisine, making your time even more memorable. We invite you to experience the essence of Otsu yakitori at our counter.
To ensure our guests can relax and have a comfortable time, we are committed to providing meticulous service. From the timing of drink service and explanations of the dishes to accommodating allergies and dietary restrictions, we provide thorough hospitality tailored to each customer's needs.
For anniversary celebrations, we are also happy to discuss arrangements for surprises. Whether it's bringing in a cake or preparing a message plate, we will do our best to accommodate your wishes, so please feel free to consult with us. We value our customers' desires and will support you in creating the best possible memories.
In addition to our yakitori, our other signature dish, Hakata Mizutaki, and our carefully selected beverages are essential elements for enhancing your special day.
When you hear Hakata Mizutaki, you might think of winter, but our mizutaki is a delicacy that is popular regardless of the season. The rich, cloudy white soup, simmered for hours to concentrate the chicken's umami, offers a blissful taste that warms both body and soul. You can enjoy it with plenty of fresh Omi chicken and seasonal vegetables.
Part of the charm of mizutaki is enjoying the process itself. First, you savor the clear broth on its own. Next, you enjoy the chicken with our special ponzu sauce. Then, you add vegetables and mushrooms to simmer. Finally, you finish the meal with a savory rice porridge (zosui). The time spent slowly completing the dish while conversing is the perfect way to foster a sense of togetherness at a business dinner or anniversary. The deeply flavorful mizutaki will liven up your conversation and create a special atmosphere.
Delicious food requires equally delicious drinks to accompany it. We offer a wide lineup of beverages, from sake and shochu to wine, all selected to pair perfectly with our Omi chicken skewers and Hakata Mizutaki.
For sake in particular, we always have over 20 varieties available, carefully selected from across Japan, including seasonal limited editions and rare local brews. Our knowledgeable staff will be happy to recommend the perfect bottle to match your preferences and your meal. For instance, we might suggest a crisp, dry sake for fatty chicken cuts, or a fruity ginjo for delicate vegetable skewers. Of course, we also have a wide selection of beer, whiskey, plum wine, and soft drinks, so even those who don't drink alcohol can fully enjoy their time.
As a restaurant rooted in the community, under the banner of Ishiyama Yakitori and Keihan Ishiyama Izakaya, we actively incorporate local Shiga ingredients and sake. Menus featuring seasonal ingredients and famous sake from Shiga's breweries are also an excellent way to extend hospitality to guests from out of town. We make no compromises, from ingredient selection to cooking and serving, to allow you to experience the charm of the region with all five senses.
To ensure your important business dinner or anniversary with us is a success, here are some concrete preparation steps and tips for making a reservation. Proper preparation will allow you to relax and enjoy the best possible experience on the day.
Following these steps will help you feel at ease on the day of your visit and allow us to provide you with the best possible service.
Is it okay to ask for something like this? I'm not sure which course is best. No matter how small the question, please don't hesitate to ask us when you book or call. Our experienced staff will wholeheartedly support you to ensure your special day is the best it can be.
