Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Dine with Confidence at 'Ishiyama Kaisen'! A Guide to Allergy-Friendly Banquets

Introduction

The charm of Ishiyama Kaisen lies in its exceptionally fresh cuisine, a tapestry woven from the bounty of Lake Biwa and the treasures of nearby seas. Our exquisite dishes, made with an abundance of fresh seafood, stimulate the senses and provide an unforgettable dining experience. In particular, our signature straw-grilled skipjack tuna and seasonal seafood delivered directly from the fishing port have won acclaim from many customers for their aroma and flavor.

However, while seeking a wonderful culinary experience, we understand that dining out can sometimes be a source of anxiety for guests with food allergies. Concerns like Does this dish contain an allergen? or Will my request be properly understood? can prevent one from fully enjoying what should be a delightful meal.

In this article, we will detail the measures we take at Ishiyama Kaisen to ensure that guests with allergies can enjoy their dining experience to the fullest. As an izakaya in Keihan Ishiyama and a local pub in Awazu, we will share our commitment and specific strategies for ensuring all our customers can dine with peace of mind and a smile.

The Challenge

The Anxieties of Dining Out with Allergies

For many, the time spent sharing delicious food and conversation with friends and family is a priceless joy. However, for guests with food allergies, dining out can sometimes present a significant barrier. Since it concerns one's health, meticulous care is essential to enjoy a meal with peace of mind.

  • Difficulty Choosing from the Menu

Questions like Does this dish contain eggs? or Is dairy used? arise with every item. If labeling is inadequate, the available options can become extremely limited.

  • Uncertainty in Communicating Information During Booking

When conveying allergy information by phone or online, it's natural to worry, Was my message received correctly? or Will they remember? Especially for large groups at an Ishiyama banquet izakaya, there is a concern that individual requests might be overlooked.

  • Concerns About the Risk of Accidental Ingestion

Cross-contamination, where allergens mix with other ingredients during preparation, is another major source of anxiety. To eat with confidence, guests must trust the restaurant's thorough hygiene management and cooking processes.

It is our greatest wish to avoid a situation where these anxieties prevent you from truly enjoying the delicious cuisine of Ishiyama Kaisen, forcing you to remain on high alert throughout your meal. As an izakaya in Keihan Ishiyama and a pub in Awazu, we are committed to addressing these issues sincerely to provide the best experience for all our guests.

Our Basic Allergy Management Practices at Ishiyama Kaisen

To ensure you can enjoy Ishiyama Kaisen to the fullest, we have implemented a multi-faceted approach to sincerely address our guests' allergies. We believe that providing meticulous, personalized service is the first step toward ensuring you can dine with us in complete confidence.

Information Sharing System with Dedicated Staff

  • Reliable Sharing of Allergy Information

Allergy information provided by our guests is instantly shared not only at the time of booking but with all kitchen and floor staff. In addition to verbal communication, we use a dedicated system with specialized sheets to ensure information is relayed accurately. This prevents situations where requests are not communicated and allows all guests to enjoy the cuisine of Ishiyama Kaisen with peace of mind.

  • Regular Staff Training

Knowledge about allergies is constantly evolving. We conduct regular training for all staff on allergy fundamentals, the risks of accidental ingestion, and emergency response procedures. We strive to operate with the latest knowledge and awareness to accurately answer any questions from our guests.

Ingredient Management and Cooking Process Innovations

  • Thorough Allergen Labeling and Ingredient Management

We carefully manage all ingredients used in our restaurant by checking allergen information sheets from our suppliers. We maintain thorough allergen labeling not just upon delivery but also during storage to prevent the use of incorrect ingredients. While freshness and quality are paramount for our straw-grilled skipjack tuna and port-direct seafood, we manage their allergen information with equal importance.

  • Separation of Cooking Utensils and Rigorous Cleaning

When preparing meals for guests with allergies, we use separate cooking utensils and cutting boards whenever possible to minimize the risk of cross-contamination. After use, these items are thoroughly washed and sanitized to prevent any impact on subsequent cooking. Despite our limited kitchen space, we prioritize guest safety, and our entire staff is highly conscious of this commitment.

  • Flexible Response for Individual Preparation

Depending on the guest's specific allergies, we may alter parts of a menu item or prepare a dish from scratch. For example, we can omit certain seasonings or substitute ingredients. As an izakaya in Keihan Ishiyama, this flexibility reflects our dedication to pursuing every single customer's definition of delicious.

Thorough Allergen Labeling and Menu Development

  • Detailed Allergen Information in Our Menus

In our menus, we strive to list not only the 7 major specified raw materials (egg, milk, wheat, buckwheat, peanut, shrimp, crab) but also the 21 items that are recommended for labeling. This helps our guests choose their meals with confidence. Please do not hesitate to ask our staff if you have any questions.

  • Development of Allergy-Friendly Menus

We are also focused on developing courses and à la carte dishes that avoid specific allergens as much as possible. We are constantly experimenting to meet diverse dietary needs so that all guests can fully experience the charm of Ishiyama Kaisen. As a pub in Awazu, we believe these efforts are essential to remaining a beloved establishment in our community.

Enjoy Our Straw-Grilled Skipjack Tuna with Confidence! Our Commitment to Freshness and Safety of Port-Direct Seafood

Our pride, the Straw-Grilled Skipjack Tuna, is a fragrant masterpiece made by searing fresh tuna in the high heat of a straw fire. Additionally, our seasonal seafood, sourced directly from the fishing port, allows us to offer the best ingredients of the day. We believe that allergy management and safety are just as crucial as freshness for these dishes.

Why Freshness and Quality Reduce Allergy Risks

  • Selection of Safe and Secure Ingredients

We select seafood sourced directly from fishing ports where the origin and fishing methods are clear. By understanding not only the freshness but also the environment in which the seafood was raised and caught, we reduce the risk of unnecessary additives or allergen contamination. For example, we are especially careful to verify the origin and freshness of certain types of seafood that can cause allergic reactions. This is the foundation of trust at Ishiyama Kaisen.

  • Preventing Allergen Changes Due to Deterioration

It is known that as seafood loses its freshness, it can produce histamine and other allergy-like substances. By quickly transporting fresh seafood from the port to our restaurant and managing it under strict temperature control during storage and preparation, we minimize the formation of such substances. This is our commitment to ensuring you can enjoy the taste of Ishiyama Kaisen at its best and safest.

Hygiene Management and Separation of Cooking Utensils

  • Maintaining a Dedicated Straw-Grilling Station

While the straw-grilling method itself is simple and carries a low risk of extra allergen contamination, we have established a dedicated cooking space for it to prevent cross-contamination with other dishes. The skewers, tongs, and other tools used for straw-grilling are always kept clean, ensuring our guests can enjoy their meal with confidence. This thorough management system is our promise of safety as an izakaya in Keihan Ishiyama.

  • Providing Utensils for Allergy-Specific Needs

For guests with severe allergies, we may use disposable cooking utensils or specially stored and cleaned equipment upon request. This is a measure we can take with prior consultation to ensure maximum safety. We are particularly vigilant with common allergens like wheat and eggs. As a pub in Awazu, we spare no effort for the sake of our customers' smiles.

Flexibility to Accommodate Individual Requests, Even for Ishiyama Banquets

A banquet at Ishiyama Kaisen is a precious occasion to deepen bonds with friends and celebrate special moments. Precisely because it involves a large group, we have prepared a flexible system to accommodate individual needs, so that no one with allergies has to feel like they are an inconvenience. As a banquet izakaya in Ishiyama, we promise to provide a venue where both organizers and participants can relax and have fun.

The Importance of Prior Consultation and Specific Questions

  • Detailed Inquiry at the Time of Booking

When you make a banquet reservation, we will ask in detail about any food allergies. We don't just ask for the allergen; we also inquire, to the extent possible, about details such as How much of the ingredient triggers a reaction? and What kind of symptoms have occurred in the past? This allows us to consider the most appropriate response. We have a section for allergy information on our online reservation form, and we welcome phone calls as well.

  • Coordination with Knowledgeable Staff

For guests with complex or multiple allergies, a knowledgeable staff member will handle the booking and carefully listen to your situation. Through specific consultations, we can determine if an allergen can be completely removed or if an alternative menu can be offered, proposing a plan that gives you the greatest peace of mind.

Examples of Allergy Management in Course Meals

  • Serving on Individual Plates

If allergy accommodations are needed for a banquet course, we can serve the allergen-free dishes on a separate plate for the concerned guest. This prevents cross-contamination from other dishes and allows them to enjoy their meal without worry. For example, even with our popular hot pot dishes, a staple at our Keihan Ishiyama izakaya, we can provide individual serving dishes or an allergen-free broth.

  • Modification to an Allergen-Free Menu

We also accept requests to replace or remove allergenic ingredients from specific dishes. For a guest with an egg allergy, for instance, we can prepare a special egg-free dessert to ensure the overall satisfaction of the course is not diminished. Even with a simple dish like our straw-grilled skipjack tuna, if the sauce contains a potential allergen, we can suggest an alternative.

  • Pre-Confirmation and Changes to the Menu

It is also possible to review the proposed menu, created based on your allergy information, before the banquet. This helps prevent unexpected issues on the day of the event and allows you to attend with greater confidence. As we use seasonal ingredients direct from the port, the menu may change, but we will inform you of any adjustments as they occur.

Considerations for the Drink Menu

  • A Wide Selection of Non-Alcoholic Drinks

For guests with an alcohol allergy or those who wish to abstain from alcohol due to medication, we offer a rich variety of non-alcoholic drinks. You can choose from non-alcoholic beer, cocktails, and fresh juices to suit your taste. As a pub in Awazu, we strive to offer a diverse drink menu that pairs well with the cuisine of Ishiyama Kaisen.

  • Disclosure of Ingredient Information

We disclose ingredient information for our drinks whenever possible. Our staff will be happy to provide explanations so that guests who need to avoid certain allergens or are sensitive to specific ingredients can make their selections with confidence.

Practical Guide: 3 Steps to Enjoy Ishiyama Kaisen with Peace of Mind

No matter how dedicated we are to allergy management, we cannot provide a perfect response without accurate information from you. Here are three concrete steps to ensure you can fully enjoy your meal at Ishiyama Kaisen without worry. By following these steps, you can help us ensure you have a wonderful and safe time at our Keihan Ishiyama izakaya.

Step 1: Clear Communication When Booking

The most important step is to clearly communicate your allergy information at the time of booking. This allows us to prepare in advance and welcome you with a fully ready team.

  1. Be Specific About the Type and Severity of Your Allergy
    • Which ingredients are you allergic to (e.g., eggs, milk, wheat, buckwheat, peanuts, shrimp, crab, specific types of seafood)?
    • What is the severity of the reaction (e.g., even a small amount is not okay, contact causes a reaction, it's safe if cooked)?
    • If you have concerns about seasonings or processed foods that may contain allergens (e.g., soy sauce, miso, breadcrumbs), please let us know.
  2. Provide Information According to Your Booking Method
    • By Phone: When you call, please directly inform the staff member about your allergy and provide the detailed information mentioned above. Our staff will repeat it back to confirm.
    • Online: Please fill out the Notes or Allergy Requests section of the reservation form with all the necessary details. For added peace of mind, we recommend calling the restaurant to confirm after submitting the form.
  3. Information from the Event Organizer

If you are booking a banquet at our Ishiyama izakaya, we ask the organizer to collect allergy information from all attendees in advance and provide it to us in one go. This ensures no individual's information is missed and allows for a smooth response.

Step 2: Reconfirmation Upon Arrival

We also take the opportunity to reconfirm your allergy information when you arrive. This is a crucial step to verify that the information was transmitted correctly and to give you an extra layer of confidence.

  1. Respond to Staff Confirmation
    • After you are seated, a member of our floor staff may ask again about your allergies. At this time, please confirm that the information we have is correct and let us know if there are any changes.
    • If you have any lingering concerns or additional information to share, please do not hesitate to tell the staff at this time.
  2. Utilize Allergen Sheets and Menu Labels
    • Please check the allergen information sheets we provide or the labels in our menu book. Confirming with your own eyes can help you choose your dishes with greater confidence.
    • If you have any questions, ask a staff member immediately. We will provide you with accurate information.

Step 3: Don't Hesitate to Ask if Unsure

If you feel even the slightest bit of uncertainty during your meal, such as Is this dish okay for me?, please call a staff member right away. Your safety is our top priority.

  1. Questions About the Food Served
    • If the appearance or aroma of a dish makes you suspect it might contain an allergen, please do not eat it. Call a staff member immediately to check.
    • Even with simple dishes like our straw-grilled skipjack tuna or fresh port-direct fish, be aware that garnishes or sauces may contain allergens.
  2. If You Feel Unwell
    • In the unlikely event that you feel unwell during your meal, please inform a staff member immediately. We will respond promptly.

These steps are designed to create a partnership between you and our restaurant, ensuring that even guests with allergies can fully enjoy the delicious cuisine of Ishiyama Kaisen. As a pub in Awazu and an izakaya in Keihan Ishiyama, we sincerely look forward to welcoming you.
