Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Ishiyama. Sake-friendly bites such as seared Hakata mentaiko are ready to pair.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy seafood in landlocked Shiga in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Ishiyama.

05

Banquets & Private Hire

Relaxed table and open-terrace seating, banquet courses with free-flow drinks, and full-venue bookings (50+) on request. Steps from Ishiyama Station — ideal for company parties and gatherings. Plenty of shareable plates, such as our fried chicken, round out the table.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Producers

Savoring the Seasons at Awazu Nomiyasan

Savoring the Seasons at Awazu Nomiyasan

I want to eat something delicious today, but where should I go? I'd like to spend a special time enjoying a meal that reflects the season. If this sounds like you, then Awazu Nomiyasan might be just the place you're looking for. We cherish the rich bounties of the four seasons, offering the finest dishes and warm hospitality that can only be enjoyed at their peak. Please spend a luxurious time by Lake Biwa, in the scenic town of Awazu, indulging your palate with seasonal delicacies.

In particular, our famous Straw-Grilled Bonito can be enjoyed year-round, but the changes in its fat content and flavor with each season are truly exceptional. Furthermore, our fresh seafood, delivered directly from the fishing port every morning, brings the best of the day's catch straight to your table. Awazu Nomiyasan is more than just an izakaya. It is a place where you can feel the changing seasons through cuisine and create lasting memories.

Where Can You Truly Savor Delicious Seasonal Ingredients?

The term seasonal menu is common, but finding a restaurant that truly serves the most delicious ingredients of the season in their prime condition can be surprisingly difficult. You naturally want to fully savor ingredients that are unique to that time of year. For customers who wish to enjoy fresh, carefully prepared seasonal dishes, choosing the right restaurant can be a challenge.

For example, tender bamboo shoots in spring, refreshing conger eel in summer, fragrant matsutake mushrooms and fatty saury in autumn, and firm crab and yellowtail in winter. Japan is blessed with an abundance of wonderful ingredients each season. However, simply stating we use seasonal ingredients is not enough. We believe that meticulous attention to detail—where the ingredients come from, how they are prepared, and what drinks pair best with them—is essential for our customers' complete satisfaction.

Furthermore, when searching for an izakaya for banquets in Ishiyama, a place for after-parties in Ishiyama, or an izakaya for dates in Ishiyama, it's not just about delicious food. The ambiance and attentive service tailored to the occasion are also crucial. A place for conversation with a loved one, a venue to reward colleagues for their hard work, or a fun time with friends. The key to choosing a restaurant is whether it can provide the perfect evening that customers seek for each of these scenarios.

Awazu Nomiyasan's Pride: Straw-Grilled Bonito and Port-Direct Freshness

One of our greatest attractions is, of course, our Straw-Grilled Bonito. Seared quickly in fragrant straw smoke, the bonito is crispy and aromatic on the outside, yet juicy and tender on the inside. The harmony of the straw's aroma and the natural umami of the bonito that unfolds in your mouth is truly a blissful experience. This traditional cooking method maximizes the bonito's flavor, creating a taste unlike any other. Please try it with a generous amount of condiments.

  • The Secret of Straw-Grilling: By searing it quickly over a high flame, we lock in the umami while imparting a unique smoky aroma. This fragrance further enhances the bonito's flavor.
  • Commitment to Freshness: We use exceptionally fresh bonito delivered directly from our partner fishing ports every day. This allows us to serve it in its best condition to our customers all year round.
  • Seasonal Enjoyment: The fat content of bonito varies by season. Enjoy the light, refreshing taste of the first bonito of the season and the rich, fatty umami of the returning bonito. Savor the distinct character of the fish in each season.

Furthermore, we are committed to sourcing our seafood direct from the fishing port. By procuring fresh seafood not only from Lake Biwa but also directly from the Sea of Japan, we can offer the most delicious fish of the day at peak freshness. Our Today's Special, which changes with the seasons, is truly the bounty of the sea. Enjoy seasonal fish prepared in various ways—as sashimi, grilled, or simmered.

Limited-Time Seasonal Menus and Seasonal Sake & Shochu

At Awazu Nomiyasan, we prepare elaborate limited-time menus each season so that you can discover something new with every visit. In spring, we welcome you with dishes like wild vegetable tempura and sea bream clay pot rice; in summer, conger eel dishes and salt-grilled sweetfish; in autumn, masterpieces using matsutake mushrooms and saury; and in winter, yellowtail with daikon radish and monkfish hot pot, all featuring an abundance of seasonal ingredients.

Savoring Ingredients that Color the Seasons

  1. The Arrival of Spring: Vibrant and gentle-flavored dishes featuring ingredients that signal spring's arrival, like sea bream, firefly squid, and bamboo shoots, adorn your table. They pair perfectly with sake that has a fresh, green hue.
  2. The Cool of Summer: Conger eel, at its peak season, is delicately prepared for a refined taste. Salt-grilled sweetfish, a gift from Lake Biwa, entices with its fragrant aroma. We also offer plenty of refreshing summer vegetables to create dishes perfect for the hot season.
  3. The Harvest of Autumn: Aromatic dishes that evoke the essence of autumn are served, such as matsutake mushrooms steamed in a teapot, salt-grilled saury, and mushroom mixed rice. Be sure to try pairings with autumnal sake like hiyaoroshi.
  4. The Richness of Winter: Heartwarming dishes made with luxurious winter ingredients like fatty yellowtail, crab, and monkfish will satisfy both body and soul. Enjoy a cold winter's night with hot sake or a rich shochu.

Our chefs skillfully prepare these limited-time seasonal menus so you can experience Japan's beautiful four seasons with all five senses. We also have a wide selection of seasonal sake and shochu, carefully chosen to complement the dishes, and we will propose the best pairings that can only be enjoyed at that time of year.
