Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Savor the Luxury of Fresh Fish Direct from the Port at a Keihan Ishiyama Izakaya

Embark on a Journey to Savor True Luxury at a Keihan Ishiyama Izakaya

Ishiyama, a captivating town where Lake Biwa and historic streetscapes intertwine. When you want to enjoy delicious food and drinks to your heart's content in this area, what kind of restaurant comes to mind? Among the many izakayas, it can sometimes be difficult to find one that truly makes you think, 'I'm glad I came here.'

For those who have a particular fondness for fresh seafood, choosing a Keihan Ishiyama izakaya is a crucial decision that will greatly influence the satisfaction of your day. If you're visiting Ishiyama, you'd naturally hope for a special dining experience that lets you forget the everyday. We believe that 'true luxury' is found not just in a meal, but in a restaurant that creates a memorable moment, and that's what we want to share with you.

In this article, we will delve into the charms of Keihan Ishiyama izakayas that place a special emphasis on their 'commitment to ingredients.' Specifically, through the story woven by fresh seafood delivered directly from the port, we will provide you with valuable tips for choosing your next izakaya.

Why the Obsession with Direct from the Port? An Unwavering Passion for Freshness

When you hear the phrase 'direct from the port,' what comes to mind? It's not just about being 'fresh'; it holds a deeper meaning and our unwavering passion for cooking. In a typical distribution channel, fish landed at the port goes through markets and several intermediaries before reaching the restaurant. In this process, a loss of time and freshness is inevitable.

However, our goal is to deliver fish in its absolute best condition, just as it was when it was landed, directly to your table. To achieve this, the 'direct from the port' method—sourcing without intermediaries—is essential. This commitment is the cornerstone of our ability to provide the best experience for our customers as a Keihan Ishiyama izakaya.

'Why such a strong focus on freshness?' The answer lies in the original flavor of the fish and our culinary philosophy of maximizing it. Freshly caught fish has exceptional firmness, fat content, and a unique aroma. It is this vibrant state that allows for a delicate yet powerful flavor, which is the 'authentic taste' we want our customers to experience.

To source fresh seafood, a strong relationship of trust with the fishermen is also crucial. By visiting the port directly, seeing the fishermen's faces, and talking with them about the day's catch and their recommendations, we can consistently secure the best ingredients. This cumulative effort is one of the reasons why, as a Keihan Ishiyama izakaya, we can always offer high-quality dishes.

The Charm Born from a Commitment to Ingredients, Woven by Direct-from-the-Port Sourcing

How does our direct-from-the-port seafood bring special value to our dishes? Here, we'll detail its specific charms and how they translate into your dining experience.

The Joy of Savoring the Once-in-a-Lifetime Season That Changes Daily

  • Encountering the Best Fish of the Day
Every day, our kitchen receives fresh seafood landed that very morning, delivered directly from the port. This is the 'catch of the day,' the very bounty of the sea that our fishermen have painstakingly caught. For this reason, the types and cuts of fish we can offer vary daily. We invite our guests to fully enjoy the 'once-in-a-lifetime season' that can only be savored on that particular day, at that particular moment.

For example, if a sparklingly fresh red sea bream arrives in the morning, we serve it as sashimi to highlight its translucent beauty and elegant sweetness. If it's a fatty seasonal yellowtail, we straw-grill it to impart a smoky aroma and bring out its maximum flavor. These experiences are special, almost as if you can feel the very breath of the fishing port that day.

  • Feeling the Changing Seasons Through Our Dishes
The four seasons of Japan bring a rich variety to the bounty of the sea. From cherry blossom sea bream and first bonito in spring, to rock oysters and horse mackerel in summer, returning bonito and saury in autumn, and winter yellowtail and pufferfish in winter, the variety of seasonal seafood is vast. We respect this natural cycle and carefully select and source the most delicious ingredients of the season. This allows our customers to enjoy a wide array of marine blessings throughout the year.

You will find new discoveries and delights each time you visit. Even the same type of fish can have a different flavor depending on the season, so we strive to offer fresh surprises to our repeat customers. This is the philosophy of 'eating the season' that we cherish as a Keihan Ishiyama izakaya.

  • Exquisite Dishes that Showcase the Chef's Discernment and Skill
The seafood delivered directly from the port is not just fresh; its true value is realized only when the chef's discerning eye and skill are applied to bring out its best qualities. At our restaurant, experienced chefs assess the condition of the fish each day and choose the optimal cooking method for each one—whether to serve it as sashimi, grill it, simmer it, or fry it. We take care to work simply yet meticulously, so as not to spoil the natural flavor of the ingredients.

Sometimes, we receive rare or unusual fish that you don't often see. On such occasions, we actively share information about the fish and recommend ways to eat it, hoping to pique our customers' interest and hear them ask, 'What kind of fish is this?' We find the greatest joy in sharing the fun of food through conversation with our customers.

Practical Steps to Fully Enjoy the Direct-from-the-Port Season at a Keihan Ishiyama Izakaya

You'll want to make the most of our special direct-from-the-port seafood, right? Here are some practical steps to make your experience at our Keihan Ishiyama izakaya even richer.

  1. Check for Information on What's in Season Before You Visit!
What kind of fish is landed each day changes depending on the weather and fishing conditions. When possible, we may post information about our 'catch of the day.' Checking this in advance can build anticipation for your visit. But don't worry if no information is available; our staff will be happy to guide you on the day.

  2. Communicate Your Specific Requests When Booking
Whether you're visiting as a large group for a banquet or for a special date, we strongly recommend making a reservation in advance. At that time, letting us know specific requests like, 'I'd like the chef's choice course featuring seasonal fish,' or 'I love a certain type of fish, and I'd like to have it if it's available,' will make it easier for us to provide dishes that meet your expectations.

  3. Ask the Staff for Today's Recommendation
Once you're seated, start by asking the staff, 'What's the best recommendation for today?' Since our direct-from-the-port seafood changes daily, you might encounter fish that is in its prime condition or a rare find. The chefs and staff know the day's catch best and will give you the perfect advice. You might even discover an 'off-menu' item.

  4. Savor the Flavors with Various Cooking Methods
Our fresh, direct-from-the-port fish can be enjoyed not only as sashimi but also grilled, simmered, fried, or steamed. For example, you could try the same fish prepared in multiple ways—enjoying its natural flavor as sashimi, then savoring its aroma when salt-grilled. Discovering the diverse expressions of seafood will deepen your appreciation for the culinary arts.

  5. Enjoy Pairings with Sake and Other Drinks
Fresh seafood pairs beautifully not only with sake but also with white wine, shochu, and various other drinks. Try pairing your dishes with our proudly selected local sake or curated wines. If you're unsure, ask our staff for recommendations. We will suggest the perfect match to further enhance the flavor of the seafood.

  6. Tips for Organizers of Large Group Banquets in Ishiyama
For large groups, it's a good idea for the organizer to be aware of attendees' preferences and allergies beforehand. Communicating this information when booking will ensure a smooth dining service and a banquet that everyone can enjoy. We also accommodate wrap-up parties, so it's important to choose a course and drink plan that fits the purpose and budget of your event. We also recommend visiting beforehand for a preview.
