Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Seafood & Sashimi

04

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Your Guide to Allergy-Friendly Banquets at Our Keihan Ishiyama Izakaya

A Guide to Allergy-Friendly Banquets: Dine with Confidence at our Keihan Ishiyama Izakaya

Welcome to our izakaya in Keihan Ishiyama! Our goal is to provide everyone with delicious food and a wonderful time, making the most of the bounty of Lake Biwa and its rich ingredients. However, in recent years, we've noticed an increase in customers with food allergies and have heard that some hesitate to dine out. It is truly unfortunate for us when a wonderful culinary experience is marred by anxiety over allergies. That is why today, we, as a Keihan Ishiyama izakaya, would like to explain in detail the measures we are taking to ensure our customers can enjoy their meals with peace of mind.

If you've ever felt that dining out is difficult because of my allergies or it's lonely not being able to eat the same thing as everyone else, please rest assured. We are sincerely dedicated to ensuring that every single customer can gather around the table with a smile. Please enjoy your special time at our Keihan Ishiyama izakaya with complete confidence.

We'll Resolve Your Allergy Concerns at Our Keihan Ishiyama Izakaya

Dining out adds color to daily life and is an important opportunity to deepen connections with others. However, for those with food allergies, this opportunity can sometimes be accompanied by great anxiety. Especially at an izakaya, which handles a wide variety of ingredients, concerns like I don't know what's in the food or I'm worried about cross-contamination may be endless. We deeply understand the anxieties our customers face. With a strong desire for everyone to enjoy our cuisine with peace of mind and to their heart's content, our Keihan Ishiyama izakaya is seriously committed to handling food allergies.

So that everyone can smile in a delicious and enjoyable dining setting, we take the utmost care at every step—from sourcing ingredients to cooking and serving our customers—to protect the dietary safety of each individual. We strive daily to make our Keihan Ishiyama izakaya a special, memorable place, even for those with allergies.

In this column, we will clearly explain the specific measures we are taking and how we ask for your cooperation. What we value most is communication with our customers. If you have any concerns or requests, please do not hesitate to let us know.

Responding to Our Customers: Our Keihan Ishiyama Izakaya's Allergy Approach and Commitment to Ingredients

High-quality ingredients are the foundation of our cuisine. At our Keihan Ishiyama izakaya, we leverage our strength of sourcing direct from the fishing port to offer an abundance of fresh seafood. This port-direct system not only ensures superior freshness but also gives us the advantage of easily obtaining detailed information about our ingredients. The first step in our allergy management starts right here, with the selection and control of our ingredients.

Beyond Freshness: Ensuring Traceability for Peace of Mind

  • Careful Supplier Selection and Information Sharing: We source ingredients only from suppliers with whom we have built long-term relationships of trust. From our port-direct seafood to vegetables, meat, and seasonings, we strive to have them share as much information as possible, such as the environment in which they were raised and the processing they have undergone. This allows us to more accurately identify and manage allergens.
  • Balancing Freshness and Information with Port-Direct Sourcing: By sourcing fresh fish directly from the port without intermediaries, we can quickly obtain primary information such as when and where the fish was caught and how it was processed. We believe this high level of transparency is crucial for allergy management and leads to customer peace of mind.
  • Centralized Management of Allergen Information: We thoroughly identify and list the allergen information for all ingredients used in our restaurant. This information is shared not only with the kitchen staff but also with the service staff, and it is regularly updated and confirmed so we can promptly answer any customer inquiries.

We always prioritize customer safety and approach each and every ingredient with sincerity. We want all our customers to safely enjoy the delicious taste of our fresh, port-direct ingredients. That is the wish of our Keihan Ishiyama izakaya.

Creating Customized Meals: Meticulous Consultation and Kitchen Coordination

A commitment to ingredients alone does not complete our allergy management. It is essential to conduct a meticulous consultation based on each customer's specific allergy information and to accurately communicate that to the kitchen. At our Keihan Ishiyama izakaya, we place the utmost importance on communication with our customers and have established a system to ensure they can enjoy their meals with peace of mind.

Smooth Information Sharing from Reservation to Arrival

  1. Confirming Allergy Information at Booking: When you make a reservation by phone or online, we ask customers with allergies to provide as much detailed information as possible. Telling us the specific ingredients (e.g., egg whites, peanuts, shellfish) and the type of reaction you have helps us prepare more effectively.
  2. Detailed Consultation by Dedicated Staff: For customers who have provided allergy information at the time of booking, a dedicated staff member will conduct a detailed consultation in person upon your arrival. While reviewing the menu, we will carefully explain what we can accommodate and if there are alternative options, tailored to your specific situation.
  3. Accurate Communication to the Kitchen: The allergy information received from the customer is promptly and accurately relayed to the head chef through a manager. To prevent misunderstandings, we ensure information is shared in writing and have a system where multiple staff members double-check it.

Kitchen Practices to Prevent Cross-Contamination

In addition to avoiding allergens, it is extremely important to prevent unintentional mixing, or so-called cross-contamination. In our kitchen, we are committed to the following practices to provide safe dishes.

  • Separate Use and Thorough Cleaning of Utensils: Cooking utensils (cutting boards, knives, bowls, etc.) used for common allergens (like wheat flour or eggs) are either used separately from those for other ingredients or are thoroughly cleaned and sanitized after each use.
  • Consideration of Dedicated Cooking Spaces or Times: Whenever possible, we take measures to minimize the physical risk of contamination, such as preparing allergen-free meals in a dedicated space or at a different time from other cooking.
  • Care to Avoid Sharing Cooking Oil: As a rule, we do not share cooking oil used for frying foods containing allergens with oil for other foods. We are particularly careful to use separate oil from that used for items like shellfish or flour-battered foods.

These initiatives are just a part of our significant efforts to ensure our customers can enjoy the cuisine of our Keihan Ishiyama izakaya with peace of mind. We make no compromises for the sake of your delicious experience.

Our Keihan Ishiyama Izakaya's Unique Proposals: Alternative Menus and Cooking Methods

Allergy management is more than just removing allergens. If removing them diminishes the taste or satisfaction of the dish, the special experience of dining out is ruined. At our Keihan Ishiyama izakaya, we devise ways to maximize the natural flavors of our ingredients so that deliciousness is not compromised even when allergens are removed. In particular, our fresh seafood direct from the fishing port is perfectly suited for allergy-friendly meals, as its deliciousness shines even with simple cooking methods.

Creating Individualized Menus that Showcase Ingredient Flavors

  • Arranging Dishes to Be Allergen-Free: Based on the allergy information from our customers, we arrange existing menu items by removing allergenic ingredients or substituting them with alternatives. For example, for a customer with an egg allergy, we might prepare fish cakes with an egg-free binder, or for someone with a wheat allergy, we might use rice flour. We actively consider such alternatives.
  • Reviewing Dashi and Seasonings: Allergens can also be present in the fundamentals of Japanese cuisine, such as dashi stock and key seasonings (e.g., wheat in soy sauce, or bonito/mackerel flakes in dashi). We check even these fine details and provide safe dishes by using allergen-free alternatives or opting for simple seasonings that highlight the ingredients' natural flavors.
  • Bringing Out Natural Flavors with Simple Cooking Methods: Our fresh, port-direct seafood requires no excessive seasoning. Simple methods like salt-grilling, steaming, or serving as sashimi, which maximize the ingredient's own flavor, have a low risk of allergens and are incredibly delicious. We are happy to propose these cooking methods based on your requests.

Safe, Individualized Service for Banquets and Large Groups in Ishiyama

For company parties, gatherings with friends, or family get-togethers, we cater to large groups for banquets, celebrations, and parties in Ishiyama. We take special care to ensure that even if someone in the group has allergies, everyone can spend their time together enjoyably and safely.

  • Reducing Allergen Contamination Risk with Individual Servings: While banquet dishes are often served on large platters, for customers with allergies, we take measures such as preparing separate individual dishes or portioning out allergen-free items individually. This significantly reduces the risk of allergen contamination.
  • Pre-Arranging Menu Details: For banquet courses, we will ask about allergies when you book and adjust the course content in advance. We can present several menu options for the allergy-friendly meal and work with you to create the best possible course.
  • Close Coordination with the Organizer: We will coordinate closely with the banquet organizer beforehand, not only on the menu content but also on seating arrangements for the guest with allergies and the method of serving their food. On the day of the event, with the organizer's cooperation, we aim for a smooth and safe banquet.

Even when you visit us for a date night in Ishiyama, we are dedicated to providing meticulous service, including allergy accommodations, so that you both can enjoy your special time to the fullest.

The Professionalism That Supports Your Safety: Staff Education and Awareness

No matter how thoroughly we manage ingredients or refine our cooking methods, we cannot provide safe service if the staff who ultimately interact with customers lack knowledge and awareness about allergies. At our Keihan Ishiyama izakaya, we focus on educating all our staff and raising their awareness so that customers can enjoy their meals with true peace of mind.

Regular Training and Information Sharing

  • Learning Basic Allergy Knowledge and Latest Information: We conduct regular training for all staff on the fundamentals of food allergies (major allergens, symptoms, emergency responses, etc.). We also stay informed about legal changes in food labeling and new allergen information to keep our knowledge up-to-date.
  • Customer Service Simulations: We conduct role-playing simulations to practice specific responses to questions from customers with allergies and the procedures for coordinating with the kitchen. Through this repeated practice, our staff can respond quickly and accurately in real situations without hesitation.
  • Sharing Successes and Areas for Improvement: We share feedback from customers, including words of thanks and any points for improvement identified during service, and apply these learnings to our daily operations. We value a culture of continuous learning as a team to aim for even better allergy support.

For Customer-Focused Service

Customers with allergies often feel anxious or hesitant when dining out. We strive to create an atmosphere where customers feel comfortable asking questions and communicating their needs. By listening to our customers, empathizing with them, and providing polite explanations based on our professional knowledge, we hope to build a relationship of trust where they feel, I'm safe at this restaurant.

We want to turn a dining opportunity that you might have given up on because of allergies into a wonderful memory at our Keihan Ishiyama izakaya. To that end, each and every staff member acts with professionalism and does their utmost for the safety and satisfaction of our customers.

Allergy-Friendly Dining at Our Keihan Ishiyama Izakaya: Practical Steps Before Your Visit

To ensure you can safely enjoy a delicious meal at our Keihan Ishiyama izakaya, there are a few things we kindly ask for your cooperation on. Following these steps before your visit will enable us to provide smoother and safer allergy support. Your understanding and cooperation are essential for us to provide safe service.

Step 1: Provide Information When Booking

The most important step is to inform us of any allergies when you make your reservation. This allows us to make preparations in advance and be fully ready to welcome you.

  1. Type of Allergy and Specific Ingredient Names: Please provide as much detail as possible, not just the general type like egg allergy or dairy allergy, but specific ingredients such as egg whites only or cashew nuts (especially if even trace amounts cause a reaction).
  2. Severity of Symptoms and Precautions: Letting us know the severity of your allergy (e.g., even a small amount can cause anaphylaxis or symptoms occur even with contact) and any special precautions allows our kitchen and service staff to be even more diligent.
  3. The Benefit of Being Detailed: When we have detailed information about your allergies in advance, we can propose suitable alternative menus without making you wait on the day of your visit and can streamline preparations in the kitchen. This allows you to relax and enjoy your mealtime.

Step 2: Final Confirmation Upon Arrival

Even if you have provided allergy information when booking, our staff will ask for a final confirmation upon your arrival. This is an important process to ensure the information was communicated correctly and to check if there have been any changes in your condition.

  • Inform Staff Again: Once you are seated, please inform your server again that you have an allergy. This verbal confirmation is a crucial step that enhances peace of mind for both you and the restaurant.
  • Confirm Your Dish Details: Our staff will explain how your ordered dish or course menu has been prepared to accommodate your allergy. If you have any questions about the details, please do not hesitate to ask then and there.

Step 3: Don't Hesitate to Ask if You Have Questions or Concerns

If you have any concerns during your meal, please do not hesitate to speak to a staff member. We will politely answer any questions, such as What ingredients are in this dish? or I'm a little worried, could you double-check for me? We want you to be able to relax and enjoy your meal completely.

Conclusion: A Table Where Everyone Can Smile at Our Keihan Ishiyama Izakaya

Our Keihan Ishiyama izakaya welcomes you with delicious cuisine made from fresh, port-direct seafood and carefully selected ingredients, all served with warm hospitality. We also work hard every day to ensure that our customers with food allergies can enjoy that same wonderful dining experience with complete peace of mind.
