Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

After reading this, you'll surely feel that when it comes to seafood in Ishiyama, this is the only place. So, why not open the door to a blissful seafood experience?

Ishiyama Seafood at its finest: The Chef's Masterpiece Course

Our Chef's Recommended Course, which we proudly present, is truly an exquisite dish that condenses the essence of Ishiyama Seafood. Our chef pours immense passion into selecting the freshest fish in their prime condition each day and expressing the changing seasons on the plate. You will feel the harmony of nature's bounty and artisanal skill with every bite.

Seasonal Delights in the Course

Japan's four seasons bring abundant blessings from the sea. At our restaurant, we prioritize serving seasonal seafood that can only be enjoyed during its peak. Delicate flavors of cherry sea bream and Spanish mackerel in spring, the rich aroma of conger pike and rock oysters in summer, the fatty umami of returning bonito and Pacific saury in autumn, and luxurious seafood like crab and pufferfish in winter. The course content changes daily depending on the day's catch, but the chef personally visits the market to carefully select ingredients, ensuring they are always served in their best condition. From appetizers to sashimi, grilled dishes, simmered dishes, fried dishes, and finally a concluding dish, the course is thoughtfully balanced, with each plate telling a story.

  • Sakizuke (Amuse-bouche): A colorful seasonal small dish to whet your appetite.
  • Seasonal Sashimi Platter: Freshly caught fish from that morning, served in its finest state. Enjoy the beauty of the knife work.
  • Signature Seared Bonito over Straw: A dish that is the face of our restaurant. Savor the fragrant aroma of straw and the melting umami of bonito.
  • Seasonal Grilled or Simmered Fish: Seasonal seafood prepared using the most delicious cooking methods, bringing out the maximum flavor of the ingredients.
  • Fried or Steamed Dish: An elaborate dish using seasonal vegetables and seafood, with a light texture and savory aroma spreading through your mouth.
  • Concluding Rice Dish and Pickles: From seasoned rice with seasonal ingredients to seafood chirashi sushi, no detail is overlooked until the very end.
  • Sweets: A comforting sweetness perfect for after the meal to conclude your experience.

Skilled Craftsmanship Reflected in Every Dish

Our chef approaches cooking with reliable techniques cultivated over many years of experience and a deep love for ingredients. Even the knife work for preparing fish is breathtakingly beautiful. The degree of doneness, the balance of seasoning, and the beauty of presentation—each element is infused with the desire to provide guests with the best possible experience. We constantly strive to maximize the natural flavors of the ingredients, adding no unnecessary touches, yet finishing with an exquisite balance that is never too simple. Please enjoy the chef's passion embedded in each dish with all five senses.

Stimulate Your Five Senses: Our Signature Seared Bonito over Straw Experience

Among our menu items, our signature Seared Bonito over Straw particularly captivates many customers. The sight of bonito dancing in the flames, enveloped in fragrant smoke, is truly magnificent. Sight, smell, hearing, taste, and touch—a special experience that stimulates all five senses awaits you here. Many customers travel from afar just to savor this dish. Please try our proudly seared bonito over straw at least once.

The Secret to the Aromatic Savoriness Created by Flames

Seared bonito over straw is a traditional cooking method where the surface of fresh bonito is quickly seared with a blazing straw flame. The straw flame reaches a very high temperature but burns out quickly, resulting in a miraculous finish where the bonito's surface is deliciously seared while the inside retains its fresh, raw texture. The unique rich aroma of straw deeply infuses into the bonito flesh, and with one bite, that savory aroma passes through your nasal passages, and a lingering umami spreads throughout your mouth.

  • Instant High-Temperature Cooking: The straw flame reaches nearly 1000 degrees Celsius, instantly searing the bonito's surface.
  • Unique Aroma: The smoke generated when straw burns imparts a rich aroma to the bonito. This scent has a unique charm, unlike any other smoked food.
  • Crispy Outside, Moist Inside: Thanks to the magic of high-temperature, short-time cooking, the surface is crispy and aromatic, while the inside is tender and moist.
  • Concentrated Umami: By applying heat instantly, the umami of the bonito is tightly sealed, resulting in a richer flavor.

The Best Ways to Enjoy Seared Bonito over Straw

While seared bonito over straw is best enjoyed simply, we also suggest ways to make it even more delicious. Feel free to combine it with various condiments according to your preference.

  1. First, with Salt: For your first bite, definitely try it simply with the accompanying natural salt. You'll experience the purest form of bonito's natural umami and the aroma of straw.
  2. With Classic Condiments: Sliced garlic, fresh onion slices, and chopped green onions. Placing these on the bonito and enjoying them together deepens the layers of flavor.
  3. Refreshing with Homemade Ponzu: Our proud homemade ponzu sauce enhances the bonito's umami with its refreshing citrus notes, making it so delicious you'll want to keep eating.

Please try various combinations to find your perfect way to enjoy seared bonito over straw.

Delightful Dishes Woven from Directly Sourced Freshness and Seasonality

The root of the deliciousness of the seafood dishes we offer undoubtedly lies in their freshness. We go to the fishing port every morning, seeking the highest freshness worthy of the Ishiyama Seafood signboard. Fish and shellfish landed that very morning arrive on your table the same day. This is the true essence of our seafood, an experience you won't find anywhere else.

The Reason for Daily Deliveries of Ocean's Bounty

The phrase direct from the fishing port symbolizes our commitment to freshness. It is thanks to our long-standing relationships with trusted fishermen that we can always procure seafood in its optimal condition. Fishermen painstakingly cultivate and catch the bounty of the sea, and we prepare it with heart. It is this connection that allows us to deliver reassurance and感動 to you. Our chef personally selects ingredients, judging by the firmness of the flesh, the amount of fat, and above all, their liveliness. We never compromise, sourcing only the finest ingredients.

  • Reliable Network: We source seafood directly from fishing ports and fishermen with whom we have long-standing relationships.
  • Chef's Expertise: Every morning, the chef visits the market to assess the day's weather and sea conditions, carefully selecting the best seafood.
  • Efforts to Maintain Freshness: Upon arrival at the restaurant, the procured seafood is immediately subjected to appropriate treatment, with meticulous care taken to preserve its freshness.

Not Just Sashimi: Ways to Enjoy Fresh Fish

It's often thought that fresh fish is best as sashimi, but our chef excels at bringing out new charms through various cooking methods while utilizing its freshness. For example, seasonal white fish, when grilled until plump, highlights the crispiness of the skin and the umami of the flesh. Fatty fish, when simmered, becomes incredibly tender, and its compatibility with the sweet and savory sauce is outstanding. Furthermore, fresh bigfin reef squid and sweet shrimp, when made into tempura, enhance the natural sweetness of the ingredients and offer a light texture.

Our cuisine is not just about arranging ingredients. It's about discerning the unique character of each seafood and serving it to customers in its most delicious state. That is our unwavering commitment to seafood cuisine. Please experience the infinite possibilities woven by seasonal fresh fish at our restaurant.

Sake that Further Enhances Seafood Cuisine

In particular, sake pairs exceptionally well with fresh seafood. We offer a selection of premium sakes from across Japan, including dry junmai sakes that maximize the umami of seafood, and mild ginjo sakes that don't overpower the delicate flavors of fish. We also offer local Shiga sake, allowing you to experience the region's bounty with all your senses.

  • Junmai Ginjo-shu: Its fruity aroma and clean finish enhance the delicate flavors of sashimi and white fish.
  • Tokubetsu Junmai-shu: Characterized by a robust rice umami and richness. It pairs exceptionally well with flavorful dishes like seared bonito over straw and simmered fish.
  • Dry Honjozo-shu: Its crisp, dry taste provides a refreshing aftertaste for oily dishes like tempura and fried foods.

If you're unsure which sake to choose, please feel free to ask our staff. We will recommend the perfect bottle to match your preferences.

Wine, Shochu, and an Abundant Lineup

In addition to sake, we offer a wide range of drinks that can be enjoyed in pairing with seafood cuisine. The crispness of white wine, the rich aroma of red wine, and the deep flavors of shochu all further enhance our dishes.

  • White Wine: Dry, mineral-driven Chardonnays or Sauvignon Blancs pair particularly well with seafood, enhancing the natural sweetness of fresh seafood.
  • Red Wine: Lighter red wines can be surprisingly good companions to seared bonito over straw or thick-cut grilled fish.
  • Shochu: We offer various types of shochu, including imo (sweet potato), mugi (barley), and kome (rice). Enjoy the mariage with seafood dishes in your preferred way: on the rocks, with water, or hot.
  • Others: We also have a full selection of beer, sours, whiskey, plum wine, and soft drinks, so even those who don't drink alcohol can enjoy themselves.
