Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Straw-Seared Bonito and Wine: A Special Night in Ishiyama

Straw-Seared Bonito and Wine: A Special Night in Ishiyama to Delight Your Senses

If you're thinking, I want to eat something delicious tonight, I want to make my time with a loved one special, or I want to chat with friends to my heart's content—there's a place right here in Ishiyama that can grant those wishes. We proudly recommend our straw-seared bonito, paired with wine that further enhances its charm. We're not just about serving delicious food; we want you to have a memorable night. Here's a look at our dedication and how to enjoy your experience.

The Essence of Straw-Seared Bonito: Aroma and Umami Woven by Flames

What comes to mind when you hear straw-seared bonito? At our restaurant, we take exceptionally fresh bonito and sear it instantly over a powerful, blazing straw fire. This very moment is where the magic of straw-searing is concentrated. The smoke rising from the burning straw envelops the bonito's surface with a unique, smoky fragrance, making the skin crisp and aromatic while keeping the inside unbelievably juicy. This perfect searing is the hallmark of our chefs' skill.

  • The Magic of the Flame: The intense heat of the straw locks in the bonito's umami, renders excess fat, and draws out a concentrated deliciousness.
  • Depth of Aroma: The rich scent from the straw smoke masterfully blends with the bonito's natural flavor, creating an appetizing, full-bodied fragrance.
  • A Marvel of Texture: Crispy and fragrant on the outside, with a melt-in-your-mouth, near-raw texture on the inside. This contrast delivers a thrill with every bite.

This straw-seared bonito, a true delight for the five senses, is the perfect centerpiece for a special night at our Ishiyama izakaya. We invite you to experience the sublime flavor created by this culinary art of flames.

Why Wine with Straw-Seared Bonito? The Secret to a Surprising Pairing

You might be thinking, Shouldn't straw-seared bonito be paired with sake or shochu? While those are excellent choices, we boldly recommend pairing it with wine. In fact, the unique smoky aroma of the straw-searing, combined with the rich umami and moderate fat of the bonito, creates an incredibly good match with wine. Their individual characteristics complement each other, opening up a new world of taste that surpasses all expectations.

  • Smoky Flavor and Red Wine: The savory, smoky notes of the seared bonito create a wonderful harmony with light-bodied, fruity red wines. The wine's tannins meld with the bonito's fat, spreading a rich umami flavor across the palate.
  • The Bonito's Umami and White Wine: The deep umami of fresh bonito pairs beautifully with crisp white wines that have refreshing citrus notes. The wine's acidity cleanses the palate, further enhancing the bonito's flavor.
  • Texture and Sparkling Wine: For the contrast between the crispy skin and tender flesh, a sparkling wine with fine, pleasant bubbles is also highly recommended. The textural accent and the fizziness of the bubbles create a light and enjoyable pairing.

This unconventional pairing of straw-seared bonito and wine elevates the experience at our Ishiyama izakaya to a deeper level. We invite you to discover the secret of this surprising combination for yourself.
