Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Experience Fresh-from-Port Delights in Ishiyama: Secrets to Savoring Seasonal Seafood

A Special Seafood Experience in Ishiyama: Savoring the Delights of Fresh-from-Port Seafood

For those of you looking to enjoy a memorable dining experience in Ishiyama, are you searching for a place where you can fully savor fresh seafood? Many might have high expectations, especially when hearing the words fresh from the fishing port. In our busy modern lives, discovering truly delicious seafood and forgetting the daily hustle is an irreplaceable joy.

At our restaurant, we are passionate about bringing the bounty of fresh-from-port seafood directly to our customers. Why do we insist on such freshness and quality here in Ishiyama? It's because we want as many people as possible to experience the delight that comes from the finest ingredients.

However, even with the simple phrase fresh from the fishing port, you might wonder how to truly discern its value and enjoy it to the fullest. What exactly is seasonal seafood? What are the best ways to prepare and taste it? And how do you choose the perfect seafood izakaya in Ishiyama for a special time with loved ones, a large banquet, or a casual gathering with friends? This article will answer these questions and provide practical information to enrich your seafood experience in Ishiyama.

The Exquisite Flavor Woven by Fresh-from-Port Seafood: A Genuine Seafood Experience in Ishiyama

The very sound of fresh from the fishing port heightens our expectations. So, why exactly does seafood directly from the port offer such a special flavor? The secret lies in literally minimizing the distance and time from the fishing port to your dining table. Seafood caught in the morning arrives in our kitchen the same day and is then brought to your table. This speed is the key to preserving maximum freshness, umami, and texture.

  • The Appeal of Fresh-from-Port Seafood: Freshness, Umami, Texture
Fish freshly caught in the morning still carries the essence of the sea within its flesh. The natural sweetness and aroma of fish, which gradually diminish over time, are fully preserved with fresh from the fishing port delivery. Moreover, the firm texture and plump resilience can only be savored from truly fresh ingredients. The rich flavor and pleasant bite, distinctly different from seafood that has gone through conventional distribution channels, will leave an unforgettable impression once experienced.
  • Today's Special Reveals the Sign of the Season
Restaurants dedicated to fresh from the fishing port carefully select and source the best quality seafood available on that particular day. Therefore, among the menu items, Today's Special can be said to be the finest dish, boasting the utmost freshness of the day. This is also a sign of the seasonal bounty provided by nature. If you're unsure, please ask our staff. You're sure to find the most delicious encounter of the day.
  • Difference from Conventional Distribution: The Secret to Deliciousness
In general seafood distribution, fish often passes through several intermediaries and markets from catch to consumer, inevitably taking time. Various measures are taken to prevent freshness from deteriorating during this period, but fresh from the fishing port significantly shortens these processes, allowing seafood to reach the restaurant in its optimal condition immediately after being caught. This shortened distribution channel is the secret to an unparalleled taste experience.

The Unique Luster and Flavor of Fresh-from-Port Fish

Fresh fish looks different from the moment you see it: the translucent color of its flesh, its taut skin, and, above all, a vibrant luster full of life. These are all signs of its high freshness. When you take a bite, you'll be amazed by the melting sweetness of its fat, the spreading aroma of the sea, and an elasticity that seems to dance on your tongue. This distinctive flavor is truly the essence of fresh from the fishing port and an experience we highly recommend when savoring seafood in Ishiyama.

Savoring the Seasons! Ishiyama's Seafood Menu Changes with Each Season

The ocean blesses us with abundant seasonal bounties. Throughout the year, various seafood items come into season, offering unique deliciousness only available at that time. One of the greatest pleasures of enjoying fresh-from-port seafood in Ishiyama is experiencing this seasonal transition through your palate. Seasonal ingredients are rich in nutrients, at their fattiest peak, and bursting with concentrated umami. We carefully select the most delicious seasonal seafood during each period and offer it to our customers.

  • Seafood Announcing the Arrival of Spring
Spring is the season when life sprouts anew, and the sea overflows with fresh vitality. Fish like Sakura-dai (cherry blossom sea bream) and Sawara (Spanish mackerel) come into season, offering elegant white fish umami and a subtle yet profound flavor. They pair excellently with spring vegetables, creating colorful dishes that brighten any table.
  • Refreshing Seafood for the Summer Sunshine
Summer is the season when we crave light and refreshing seafood to ward off the heat. Iwagaki (rock oysters), Aji (horse mackerel), and Ika (squid) come into season, characterized by their succulence and pleasant aroma of the sea. Rock oysters, in particular, are popular for their creamy and rich flavor, best enjoyed with a squeeze of lemon.
  • Abundant Bounty Decorating the Autumn of Appetite
As the saying goes, Autumn for appetite, and the sea is particularly abundant during this season. Fatty Modori-Gatsuo (bonito returning to feeding grounds), Aki-Shake (autumn salmon), and Sanma (Pacific saury) come into season, their rich umami truly deserving to be called the kings of autumn flavors. Their deliciousness can be enjoyed through various cooking methods, such as grilled fish, nimono (simmered dishes), and sashimi.
  • Kings of Winter Delicacies
Winter seafood, whose flesh tightens and accumulates umami amidst the severe cold, offers exceptional deliciousness. Kani (crab), Buri (yellowtail), and Anko (monkfish) come into season, enjoyable in hot pot dishes or rich-flavored sashimi. Hearty, warm dishes are a true delight of winter.

How to Enjoy Menus That Reflect the Changing Seasons

At our restaurant, we cherish these seasonal bounties and offer special menus that can only be savored during specific times. Thus, whenever you visit, a new culinary encounter awaits. We hope you won't just visit once, but return many times to experience the fresh-from-port seafood of all four seasons. Many of our regular customers visit specifically for the seasonal seafood. This creates a wonderful connection between our restaurant and our patrons, bringing joy to our daily work.

Commitment and 'Insider Tips' for Enjoying Seafood Even More Deliciously

Even with fresh-from-port seafood, seasoned skill and dedication are essential to bring out the best in the ingredients. We pay meticulous attention to every detail, even those unseen, to provide our customers with the ultimate seafood experience. Here, we introduce our commitments to enjoying seafood more deeply, along with some insider tips worth knowing.

  • The Chef's Expert Slicing Technique for Sashimi
Sashimi is the dish that allows you to most directly enjoy the taste of fresh fish. However, it's not simply about cutting it. The optimal thickness and slicing method vary depending on the type and cut of fish. For instance, fatty fish might be thinly sliced for a melt-in-your-mouth texture, while firm-fleshed fish is cut thicker to enjoy its elasticity and umami – this is where the chef's skill shines. Sashimi cut with care, slice by slice, will reveal its difference the moment it enters your mouth.
  • Cooking Methods to Enhance Ingredient Flavor: Grilling, Simmering, Steaming
Fresh-from-port fish truly shines with simple cooking methods. At our restaurant, we select the optimal cooking method according to the type of fish and the season. For example, fatty fish is slowly grilled over charcoal to bring out its aroma. Lean white fish might be simmered in an elegant dashi broth or steamed to capture its delicate umami. The ingenuity in maximizing each fish's unique character is the secret to its deliciousness.
  • Sake and Wine Pairings that Complement Seafood
Delicious seafood demands well-matched alcoholic beverages. Our restaurant offers a curated selection of sake and wines that further enhance the flavors of our seafood dishes. For instance, a crisp, dry sake pairs well with white fish sashimi, while rich seafood stews might complement a slightly heavier white wine or a light-bodied red wine. Please consult our staff, and we will suggest pairings tailored to your preferences. Enjoy the marriage of alcohol and Ishiyama seafood, making it even more delectable.

Professional Techniques to Bring Out the Best in Ingredients

Beyond simply sourcing fresh fish directly from the port, our expertise lies in elevating it into the finest cuisine. Careful preparation, precise control over aging periods, and exquisite cooking temperatures – it is the combination of these professional techniques and knowledge that allows seafood to radiate even greater charm than its natural state. We wish for our customers to have the ultimate experience, not just in visual beauty, but in aroma, texture, and taste. We never forget our respect for the ingredients and continuously strive for culinary excellence every day.

Key Points for Choosing a Seafood Izakaya in Ishiyama That Guarantees Peace of Mind and Satisfaction

Among the many izakayas in Ishiyama, finding a seafood restaurant that truly satisfies can sometimes be challenging. Since you're going out to eat, you surely want to avoid disappointment. Here, we will specifically introduce key points to look for when choosing a restaurant, so you can fully enjoy fresh-from-port seafood and have the best time. Use this checklist to find your ideal restaurant.

  1. Confirm the restaurant's commitment to fresh from the fishing port.
The term fresh from the fishing port is now used by many establishments. However, it's crucial to choose a restaurant that can clearly explain its sourcing and routes, ensuring they truly procure fresh fish directly from the port every day. It's also a good idea to check if the menu has specific notations like Today's Special or Direct from XX Fishing Port, or to ask the staff. Truly dedicated restaurants are proactive in disclosing this information.
  2. Check for the presence of seasonal limited menus.
For a restaurant handling fresh-from-port seafood, it's natural for the menu to change with the seasons. Check the restaurant's website, social media, or in-store blackboard menus to see if there are plenty of dishes featuring seasonal seafood. This will reveal the restaurant's commitment to consistently offering fresh bounty from the sea.
  3. Verify if there are private rooms or seating suitable for your occasion.
The desired ambiance varies depending on the occasion, such as an after-work party with friends, a special date with a loved one, or a large banquet. It's wise to check in advance for the availability of private rooms, the arrangement of table or counter seats, and the atmosphere of each seating area. Especially if you're considering an Ishiyama date izakaya, an Ishiyama after-work party, or an Ishiyama large banquet, communicating your seating preferences when booking will ensure a more comfortable time.
  4. Ease of booking and pre-visit consultation system.
Popular restaurants can be harder to book, but whether their reservation system is robust and if they respond courteously to phone or online inquiries is a crucial indicator of the restaurant's service quality. Also, check if they are willing to consult in advance about allergies or disliked ingredients. Meticulous attention to detail contributes to peace of mind before your visit.
  5. Staff service and depth of knowledge.
A restaurant's atmosphere is greatly influenced by its staff's service. Whether they provide accurate advice when asked about food or drinks, and if they respond with a smile and kindness, are important factors that enhance satisfaction. Pay attention to the staff's knowledge, for example, if they can provide detailed explanations about the Today's Special fish.

Pre-Visit Checklist: To Find Your Ideal Restaurant

Based on the points above, be sure to check the following items before your visit:

  • Is the fresh from the fishing port claim trustworthy?
  • Can you enjoy seasonal seafood with limited-time menus?
  • Are there seats suitable for your occasion, such as after-work parties, dates, or banquets?
  • Is booking smooth, and are they open to consultations?
  • Are the staff friendly and knowledgeable about the cuisine?

By choosing an Ishiyama izakaya that clears these points, you are sure to have the best seafood experience.
