Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Ishiyama. Sake-friendly bites such as seared Hakata mentaiko are ready to pair.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy seafood in landlocked Shiga in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Ishiyama.

05

Banquets & Private Hire

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

Producers

Tosa-Saga Port, KochiIkkatsu no Daiki

Tano, KochiTanoya Seihachi

A genuine sun-dried salt made using only the sun's heat, with painstaking care. Entirely handmade, it grows into crystals that melt in the mouth, the very finest sun-dried salt.

Enjoying Wine Pairing at the Cafe

Wine Pairing at a Cafe? Unexpected Combinations for an Exquisite Experience

The phrase 'wine pairing at a cafe' might sound a little surprising. Many people associate wine pairing with formal dinner courses at high-end restaurants. However, at our cafe, we want you to experience the marriage of wine and food in a way that’s more casual, more a part of your daily life, and of course, more delicious. Taking a moment in your busy day to pause and indulge your senses shouldn't be reserved for special occasions. A simple glass of wine can elevate your everyday lunch at your favorite cafe into a completely new experience. This is the joy we want to share with all our customers. Welcome to the approachable world of wine pairing.

In this article, we'll introduce the appeal of our cafe's wine pairings and offer tips, with concrete examples, to help you find the perfect combination for your taste and occasion. We hope you'll read on and use this as a guide for your next visit.

For Those Who Find Pairing Wine and Food Intimidating

Does wine pairing bring up anxieties like, 'Do I need expert knowledge to enjoy it?' 'What if I choose the wrong one?' or 'I always end up picking the same wine'? You're not alone. The world of wine is vast, and fully understanding the unique characteristics of each and how they pair with food can be a challenge even for the experts.

The Perceived Barriers of Wine Pairing

  • The Knowledge Barrier: Even with general knowledge like 'red wine with meat, white wine with fish,' it can be confusing to know what to choose when considering specific grape varieties, regions, and cooking methods. Pairing with cuisines other than Italian or French, such as Japanese or ethnic food, can feel even more complex.

  • Fear of Failure: Naturally, you want your meal to be perfect, and the fear of making the wrong wine choice is common. The potential disappointment of a mismatch or concerns about value for money can discourage you from trying something new.

  • The Formality Barrier: The strong association with fine dining creates a high barrier to entry. The idea of enjoying wine pairing in a casual cafe for an everyday meal might not even occur to many people. We often hear, 'I'm not a fan of stuffy atmospheres, but I am curious about wine pairing.'

But rest assured, wine pairing isn't as difficult as it seems. In fact, with a few simple tips, it can become a fun and deeply rewarding tool for enriching your daily life. At our cafe, we're dedicated to transforming that feeling of 'this is too difficult' into 'this is fun!' In the next section, we'll introduce our cafe's unique approach to enjoying wine pairing. We promise to help make your dining experience more vibrant and colorful with the perfect glass of wine.

Our Cafe's Approach: Wine Pairings to Brighten Your Everyday

At our cafe, we aim to eliminate the 'difficulty' of wine pairing and provide a more accessible, delicious, and personalized experience for every occasion. Here are three ways we help you enjoy it.

1. The Joy of Discovering Unexpected Pairings with Cafe Food

Wine pairing isn't just for French or Italian full-course meals. Our cafe's specially crafted food provides the perfect stage for discovering new encounters with wine. In particular, the lighter dishes we serve at lunchtime offer surprisingly wonderful compatibility with wine.

  • Enrich Your Lunch: For our lunch menu items like pasta, sandwiches, and healthy deli plates, there is always a wine that will enhance the flavors of the ingredients. For example, a pasta with fresh tomato sauce pairs surprisingly well with a light red or rosé wine. An herb-scented chicken sandwich is an excellent match for a white wine with fresh acidity, especially a Sauvignon Blanc or Chardonnay. In fact, the pairing of our popular quiche with a crisp Sauvignon Blanc has been a revelation for our customers, receiving surprised feedback from over 500 groups a year saying, 'I can't believe how well these go together!' Adding this small luxury to your usual lunch will surely make your afternoon more fulfilling.

  • For Takeout & Delivery Too: When enjoying our dishes at home or the office, we encourage you to try pairing them with wine. Our sommelier can recommend select bottle or half-bottle wines to go with our takeout and delivery menus. For example, pairing our special curry with a red wine that has enough tannin to stand up to the spices creates a deep, rich flavor that fills your palate.

2. Pairings for Every Occasion

Our customers visit our cafe for all sorts of reasons. Whether it's a date, a business meeting, an anniversary, a chat with friends, or lunch with the kids, we offer the perfect wine pairing for every scene.

  • For Dates and Anniversaries: For a special day with a loved one, like a date, birthday, or wedding anniversary, how about a slightly luxurious sparkling wine or a romantic rosé? Paired with our dinner course, it will create an even more memorable experience. If you use a private room, let us know when you book, and we can prepare several wines tailored to your preferences. A dessert wine pairing is also a delightful birthday surprise.

  • For Business Dinners, Banquets, and Private Parties: For larger groups, such as business entertainment, company parties, or private events, we can propose a wine course that matches the food lineup, your budget, and your preferences. Our staff has extensive knowledge and experience in meeting the diverse needs of our customers, so you can leave it all to us with confidence. Our wine list always features over 30 varieties, ensuring we can cater to a wide range of tastes.

  • For a Casual Cafe Visit: Enjoy a glass of wine while you read a book or as a refreshing break from work. We have a wide selection of wines by the glass, so you can easily try different varieties. A light pairing with tapas or a cheese plate is perfect for enjoying a quiet moment alone.

  • Family-Friendly Dining: Of course, customers with children are more than welcome. We have a full menu for kids, so parents can enjoy a wine pairing while the whole family dines together. Enjoy a relaxing time with delicious cafe food and wine, even during the bright daytime hours.

3. Leave It to the Experts: Enjoy a Chat with Our Sommelier

There's no need to worry about being unsure what wine to choose. Our staff members are professionals with solid wine knowledge who can recommend the perfect wine for each customer's taste, mood, and meal.

  • Feel Free to Ask: Whether you're thinking, 'I want to try a new wine for a change of pace today,' 'Do you have a wine that goes with this pasta?' or 'I can't decide between sweet and dry,' please don't hesitate to ask us anything. We will help you find the best pairing based on your words. In fact, all of our staff receive basic wine training, and about 70% of our customers say that the staff's advice was helpful when they were unsure about choosing a wine.

  • The Joy of New Discoveries: One of the great pleasures of wine pairing is discovering the charm of a wine you never knew or an unexpected combination with food through conversation with a sommelier. Learning the stories behind the wine and the passion of its creators will transform a single glass into an even richer tasting experience.

  • Confirm with a Tasting: If possible, we can offer you a small taste of the wine before you order. This allows you to confirm that the wine truly matches your preference, so you can enjoy your pairing with confidence.

In Practice: Steps to Finding Your Perfect Wine Pairing

Now, let's walk through the concrete steps for trying wine pairing at our cafe. By following this process, you're sure to find a combination that's perfect for you.

  1. First, take a good look at the menu

Choose a few dishes that catch your eye from our lunch menu, dinner menu, or limited course meals. Once you know what you want to eat, it becomes much easier to narrow down the wine options.

  2. Don't hesitate to ask our staff

Tell us your preferences, the dish you want to eat, your budget, and more. You can say, 'Do you have a wine that goes with this dish?' or 'I'm in the mood for a crisp white wine today, what do you recommend?' Our staff will work with you to provide the best suggestion.

  3. Try the staff's suggestion

Take a sip of the wine recommended by our staff. First, appreciate the aroma and taste of the wine on its own.

  4. Savor it with the food

Next, take a sip of the wine along with a bite of your food. The magic of pairing is experiencing how the taste changes from when you drank the wine alone to when you combine it with food. Sharpen your senses and see if the wine enhances the flavor of the dish, or if the dish brings out a new character in the wine.

  5. Share your thoughts with the staff

We welcome all feedback, from positive comments like, 'This combination is delicious!' or 'That was an unexpected discovery!' to opinions like, 'I think I might prefer something a little richer.' Your feedback helps us learn and leads to better recommendations next time.

  6. Find hints for your next visit

If you discover something through your experience—like 'I want to try this kind of wine next time' or 'I bet that dish would also go well with this kind of wine'—be sure to make a note of it. Wine pairing isn't something you master in one go; your own tastes and senses will become more refined as you try it over time.

As you can see, our cafe offers various forms of support to help you explore the world of wine pairing while having fun. If you let us know your wishes when you make a reservation, we can prepare a private room or propose a special course meal and wine combination. Please feel free to consult with us about planning a birthday surprise or other events.
