Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Kohoku, northern Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

One minute from either station, then to the hearth

About a minute on foot from the south exit of JR Ishiyama Station, and about a minute from Keihan Ishiyama Station. Once inside the 78 seat room, go and stand where the straw flames rise.

02

Tosa-Saga bonito, exactly as it comes

The bonito is shipped direct from Tosa-Saga port in Kochi. Begin at the smoke-wrapped surface, with nothing added, and confirm the sweetness of the fish itself.

03

Bring in condiments, rock salt and citrus

Change the flavor for the second half. Straw-grilled Omi beef from Shiga also finishes lighter with rock salt and a squeeze of citrus.

04

A cup on the open terrace

Counter, table and sofa seats, plus an open terrace. Cigarettes are allowed on the terrace only, and it suits a drink after a walk along the Seta River or the Seta no Karahashi bridge.

The Key to a Successful Large Group Banquet in Ishiyama: Wine Pairing

Elevating Your Large Group Banquet in Ishiyama to a Special Experience

A Large Group Banquet in Ishiyama is a gathering with dear ones. Whether it's a company welcome/farewell party, a family celebration, or a long-awaited reunion with friends, dining with a large group can create an unforgettable time for all participants. However, for the organizer, selecting a venue and menu that will satisfy every guest can sometimes be a significant source of worry. Beyond the quality of the food and the variety of beverages, the most crucial factor determining a banquet's success is the ability to offer a truly special experience.

At our restaurant, we propose a secret to elevate your Large Group Banquet in Ishiyama from a mere meal to a moment filled with culinary discovery and delight. That secret is the marriage of fresh seafood and wine. While Japanese sake has traditionally been considered the classic pairing for Japanese cuisine, especially fish dishes, wine actually pairs exceptionally well. Why not enrich your banquet even further with this fresh approach?

Moments When Your Large Group Banquet Feels Like It's Missing That One More Step

While the lively atmosphere of a large group banquet is undoubtedly appealing, do you ever feel it tends to be uniform or lacking something? Let's explore some common dilemmas customers face when organizing large group banquets:

  • Diverse Preferences Among Guests

Drinkers and non-drinkers, meat lovers and fish lovers, those who prefer sweet and those who prefer spicy... As the number of participants grows, selecting dishes and beverages that cater to each individual's taste becomes an extremely difficult task.

  • Difficulty Breaking Away from Standard Menus

There's a tendency to choose safe, standard course menus, which often results in an ordinary banquet. Many guests express a desire for new discoveries or surprises, especially when it's a special occasion.

  • The Challenge of Balancing Food and Drinks

Have you ever experienced a situation where the food was delicious, but the drinks didn't pair well, or vice versa? Without overall harmony, even the most delicious dishes lose half their appeal.

  • Lack of Special Ambiance or Presentation

It's challenging to create an atmosphere and an overall experience that feels special, going beyond simply enjoying good food.

To address these challenges and ensure guests genuinely feel, I want to come again, and That was a wonderful banquet, our restaurant offers a new perspective: wine pairing. We invite you to discover how this approach can bring enhanced satisfaction and delight to your Large Group Banquet in Ishiyama.

The Magic of Wine Pairing to Enhance Your Large Group Banquet in Ishiyama

To create a truly memorable experience where all participants can wholeheartedly enjoy their Large Group Banquet in Ishiyama, we propose wine pairing. Let's explore some exceptional culinary marriages made possible by Ishiyama's abundance of fresh seafood.

The Marriage of Fresh Ishiyama Seafood and White Wine

Our Ishiyama Seafood boasts the bounty of Lake Biwa and fresh catches delivered directly from across Japan. Its delicate flavors are an exquisite match for white wine.

  • Seasonal Sashimi Platter and Mineral-Rich Dry White Wine

The beauty of translucent flesh and the aroma of the sea that spreads in your mouth. For white fish and shellfish in particular, dry white wines rich in sharp acidity and minerality, such as Sauvignon Blanc or Chablis, are perfect. The wine's refreshing quality enhances the inherent umami of the fish and cleanses the palate. This combination is ideal for kicking off a large group banquet at an Izakaya in Keihan Ishiyama.

  • Grilled and Steamed Fish with Full-Bodied, Barrel-Aged Chardonnay

For seafood whose umami is concentrated by cooking, such as fragrant grilled sea bream with salt or plump steamed crab dishes, a rich Chardonnay with subtle oak notes pairs wonderfully. It also goes well with dishes using butter or cream, where the seafood's flavor and the wine's complexity enhance each other.

An Unexpected Encounter: Straw-Grilled Bonito and Red Wine

Our Straw-Grilled Bonito (Katsu no Warayaki) is one of our signature dishes. Seared rapidly over a straw flame, it develops a fragrant, crispy exterior while remaining wonderfully moist inside. Surprisingly, red wine reveals an exceptional affinity for this dish, characterized by its unique aroma and rich umami.

  • Straw-Grilled Bonito Tataki and Light-Bodied Pinot Noir

The fragrant smokiness of the straw, the rich umami of the bonito, and the refreshing zest of the garnishes. For this complex flavor profile, a lighter red wine with low tannins and abundant berry fruit, like Pinot Noir, is an astonishingly good match. The wine's tannins harmonize with the bonito's fat, drawing out its rich flavor while leaving a clean finish. This innovative pairing is sure to be a particularly memorable experience among Ohtsu Izakayas.

  • A New Sensation for Straw-Grilled Dishes with Rosé Wine

For those who find red wine a bit too heavy, rosé wine is also highly recommended. In particular, a fruity yet dry rosé enhances the flavor of straw-grilled bonito without overpowering it, adding a vibrant touch. Its elegant aroma stimulates the appetite and brings a bright atmosphere to any large group banquet.

A Fusion of Seasonal Delicacies, Japanese Wine, and Local Sake

Beyond seafood, seasonal delicacies nurtured by Shiga's rich natural environment, such as fresh seasonal vegetables and local specialty dishes, are also a major draw of the Large Group Banquet in Ishiyama. For these offerings, we provide an even richer regional experience by pairing them with Japanese wines, which have recently garnered significant attention, or with local sake from Shiga.

  • Dishes Featuring Shiga's Seasonal Vegetables and Japanese Wine

For example, delicate Japanese wines made from Japanese grape varieties, which complement traditional Japanese cuisine, pair excellently with dishes showcasing the sweetness of Omi rice or fresh seasonal vegetables, such as tempura or simmered dishes. Japanese cuisine, which emphasizes drawing out subtle flavors and respecting the natural taste of ingredients, and Japanese wine are truly an ideal combination.

  • Fusion of Tradition and Novelty: The Enduring Appeal of Local Sake

Of course, traditional Japanese sake, especially local sake crafted with Shiga's abundant water and rice, also pairs exceptionally well with seafood. While wine pairing is our main focus, we also offer a carefully selected range of local sakes for those who prefer it. As an Awazu bar, it is our pleasure to meet diverse needs.
